Summer strawberry recipes with Philly cheese

Anyone for tennis ?! Well, whatever your answer, and even if Wimbledon gets rained off, these delicious and surprising strawberry recipes using Philly cheese sound perfect for getting a taste of sunshine on your plate. I can't wait to try some of these out.

Strawberry Philly Meringues

portions: 8
Prep time: 15 minutes

Ingredients

250 g Philadelphia Original
50 g icing sugar
1/2 tsp vanilla extract
400 g fresh strawberries
8 meringue nests, either homemade or shop bought
approx. 80g strawberry dessert sauce

Instructions

1.Whisk together the Philly, icing sugar and vanilla extract.

2.Roughly chop the strawberries into small bite size pieces and stir into the Philly mixture. Divide this evenly between the meringue nests.

3.Drizzle the dessert sauce over the nests and if liked dust with a little icing sugar. Best served straight away.

Strawberry Macaroons with Lemon Curd Philly

Ingredients

2 large lemons (juice and zest of)
2 large eggs
175 g caster sugar
115 g butter
1 dessert spoon corn flour
200 g Philadelphia Original
30 strawberry macaroon cases

Instructions

1.Whish the eggs in a small saucepan, add the lemon juice, zest, sugar, butter and corn flour. Allow to simmer while constantly whisking for 8-10 minutes until the mixture thickens. Don’t allow it to boil.

2.Once the mixture is thick, turn off the heat and allow to cool completely before folding into the Philly.

3.Pour into a piping bag and pipe onto the bottom case of the macaroons, sandwich with the top and serve.

In A Flash Strawberry Philly Tart

Cook time: 20 minutes
Chill time: 30 minutes

Ingredients

1 ready prepared 20 cm sweet pastry case
4 tbsp redcurrant jelly or raspberry jam
250 g Philadelphia Original
100 ml Greek yogurt
40 g icing sugar
1/2 tsp vanilla extract
250 g fresh strawberries, hulled and halved

Instructions

1.Pop the pastry case on a serving plate and spread the base with the jelly/jam.

2.Mix together the Philly, yogurt, icing sugar and vanilla. Spread in to the pastry case. Arrange the strawberry halves over the filling. Chill before serving.

Strawberry Cheesecake Ice Cream

Freeze time: 24 hours
Ingredients

200 g Philadelphia Original
300 ml condensed milk
150 ml crème fraiche
Grated rind of 1 lemon
125 g fresh strawberries, hulled and halved
3 tbsp strawberry conserve
50 g digestive biscuits, roughly chopped

Instructions

1.Mix together the Philly, condensed milk, crème fraiche and lemon rind. Spoon into a freezer proof container and freeze for about 4 hours or until semi frozen.

2.Meanwhile, put the strawberries and conserve into a blender or food process and puree together.

3.Remove the ice cream from the freezer and whisk to break up the ice crystals. Stir in the strawberry puree and the crumbled biscuits. Spoon back into the freezer proof container. Freeze until completely frozen, preferably overnight. Remove from the freezer about 20-30 minutes before serving to soften slightly. Serve in scoops decorated if likes with some fresh strawberries.

Strawberry Slices with Strawberry Cream

Ingredients

500 g fresh strawberries
1 sachet (11g) powdered gelatine
200 ml double cream
300 g Philadelphia Light
2 tbsp orange liqueur
100 g caster sugar

Instructions

1.Reserve 6 strawberries for decoration. Hull and slice the rest. Put 3 tablespoon water into a small basin and sprinkle on the gelatine. Stand the basin over a saucepan of hot water and heat until dissolved.

2.Put the cream into a small saucepan and heat gently until almost boiling. Remove from the heat and stir in the dissolved gelatine and leave to cool but not set.

3.Divide the strawberry slices between 6 dessert glasses.

4.Whisk together the Philly, liqueur and sugar. Stir in the cooled cream then pour the mixture over the strawberry slices. Chill for about 2 hours or until set. Serve decorated with the reserved strawberries.

Mango Mousse with Strawberry Sorbet

Serves: 14

Ingredients

Base:

75 g butter
250 g digestive biscuits

Mandarin jelly:

375 g stock syrup (190g caster sugar, 190ml water)
7 leaves gelatine, softened in water
500 g mandarin puree

Cheesecake:

375 g stock syrup (190g caster sugar, 190ml water)
1/2 vanilla pod
7 leaves gelatine, softened in water
325 ml whipping cream
5 egg yolks (pasteurized)
175 g caster sugar
350 g Philadelphia Original Light
zest of 1/4 orange
zest of 1/4 lemon
140 ml Champagne

Instructions

1.Base: Melt the butter over a low heat. Crush the digestive biscuits to a fine crumb. Stir in the melted butter and mix well. Press the mixture into a lightly greased 8 inch/20cm loose bottom cake tin. Leave in a cool place or refrigerate to harden a little.

2.Jelly: Boil the stock syrup and add in the softened gelatine. Add in the puree and mix together. Pour 2/3 of the jelly into a 6 inch/15cm cake tin lined at the bottom with cling film. Freeze.

3.Cheesecake: Bring 1/2 of the elderflower syrup to the boil with the scraped out vanilla pod, reserving the seeds. When boiled add in the softened gelatine and mix; then pour into the remaining cold elderflower syrup. Lightly whip the cream and set aside. Whisk the egg yolks and sugar together to make a sabayon.

4.Beat the Philadelphia Light with the vanilla seeds, orange and lemon zests until fairly smooth. Add in the Champagne and continue to beat until smooth. Add in the sabayon, and then fold in by hand the whipped cream. Lastly fold in the cooled elderflower/gelatine mixture.

5.Take the biscuit base and fill the tin just over a 1/4 full with the cheesecake mixture. De-mould the jelly and place in the centre of the tin with the cheesecake mixture in. Fill the tin with the remaining cheesecake mixture until 2cm from the top. Leave to set. Once set, fill tin to the top with remaining jelly.

Strawberry Cheesecake Sundae

Ingredients

4 digestives, crushed
150 g strawberries, quartered
120 g Philadelphia Light, softened
1 tbsp icing sugar, sieved
1 tsp vanilla extract
fresh mint leaves, to garnish

Instructions

1.Place crushed digestives into the bottom of small glasses or ramekins. Tumble the fresh strawberries on top.

2.Beat together the Philly, icing sugar and vanilla until smooth. Spoon this mixture carefully over the strawberries.

3.Garnish with small, fresh mint leaves and enjoy.
