Shake Up Your Wake Up recipe : Breakfast Energy Bars


You probably remember a couple of weeks ago, we were encouraged to take part in the Shake Up Your Wake Up Breakfast Week challenge and, I'm pleased to say, even if I still have the odd morning where I naughtily head off to work on an empty stomach because I'm in too much of a rush, I have been making a concerted effort to have a proper breakfast most days. One of the things we received in our lovely breakfast hamper were these Breakfast Energy Bars and they are absolutely delicious. They're juicy and chewy and they last absolutely ages in an airtight box without going hard or stale. If you want to try out a batch, the recipe is below :

Ingredients

  • 100g butter
  • 200g clear honey
  • 200g rolled oats
  • 150g mixed seeds
  • 100g toasted flaked almonds
  • 100g sultanas
  • 50g ground almonds
  • 2 tsp sesame seeds

How to make it

  1. Preheat the oven to 180C, Gas Mark 4
  2. Heat the butter and honey in a saucepan until the butter has melted.
  3. Stir in the remaining ingredients except sesame seeds and press into a 22cm square baking tin
  4. Sprinkle over the sesame seeds
  5. Bake for 15 minutes until golden
  6. Allow to cool slightly before cutting into 12 bars
  7. Leave in the tin to cool completely before removing

Total cost : £4.04, per serving : 34p
Per portion : 254 calories, 22.3g fat (of which 5.9g saturated), 18.6g total sugars, 7.6g protein, 3.2g fibre

  1. these sound yummy, I love breakfast and always make sure the kids get something to eat before school.
    I used to make big batches of granola - this recipe sounds a like that but handier to carry to work for a mid morning snack :)
