Capricorn Goats Cheese Blogger Challenge recipe #5 : Pear & Goat's Cheese Stuffed Beefburgers


The Madhouse kids (no pun intended @Ethelthegoat !) really enjoyed helping out with the last recipe that we came up with for the Capricorn Goat's Cheese Blogger Challenge, so I decided to enrol their help again, both for coming up with a new recipe and for making it.

I told you about the fabulous hamper of ingredients that we received from Capricorn and one of the items that I wouldn't have put with goat's cheese was pears. Having drooled at the lovely Alison from Dragons & Fairydust's recipe for Baked Pear and Goats Cheese Cheesecake, I decided to bite the bullet and use the two together. I decided to try a variation on the homemade beefburgers filled with feta that we tasted in Greece and came up with Pear & Goat's Cheese Stuffed Beefburgers.

Ingredients (for 5 burgers) :

500g minced beef
1 onion, finely chopped
seasoning as desired (I used salt, pepper, bbq seasoning and Spicy Garlic Seasoning)
1 egg
5 slices of Capricorn Goats Cheese
1/2 pear, peeled and chopped into 5 pieces
a little olive oil for frying



Use a fork to break up the minced beef then stir in the egg and onion.


Get your hands in there (wash them first !) and mould the meat into five balls.


Press your thumb into the centre of each ball to create a well and push inside a piece of pear and a piece of Capricorn Goats Cheese.


Carefully mould the meat over the pear and cheese to reseal the burger.


Fry on each side for 7 minutes without moving them, gently flipping using two spatulas (to prevent them breaking apart).


We served ours with potato croquettes and salad. We decided that they would be absolutely delicious served in burger buns with Cherry Tomato Relish and Caramelised Onions too.


Big smiles and clean plates all round from the kids and grown ups alike.


They're actually really quick and simple to make too so we'll definitely be having these again. I'll be tempted to try different flavour combinations, replacing the pear with apple or sun-dried tomatoes too.

  2. I love the cheese/pear combination, and hiding them inside the burger is a lovely idea. You kids are all very cute. Keep them coming (that is recipes :))
