Capricorn Goats Cheese Blogger Challenge recipe #6 : Somersetish Tortillas !



I'm sure I'm not the only one who says things like : "What do you want for lunch, kids? A cheese and ham toasty ?" then opens the fridge and says "Umm we're out of ham actually - oh and there's no cheese left - ermm how does a tuna and sweetcorn sandwich grab you ?"! Well, that is how this particular Capricorn Challenge recipe was born ! 

I asked the ill-fated "What do you fancy for tea?" question and was given the reply Spanish tortillas - which, for anyone who doesn't know, is an omelette with potato, bacon, onions and grated cheese in it. But, just like Mother Hubbard, when I got there, the fridge was bare - or bare of the things I needed at least. So I adapted the recipe using what I had at hand, namely ham and goat's cheese, and it was just as good as the original. In honour of the original Spanish Tortilla recipe, we named it Somersetish Tortilla, because that's where Capricorn Goats Cheese is made !

Somersetish Tortillas

Ingredients :
(for 4)

4 eggs
1/2 pint milk
4 medium potatoes
4 slices of ham
a large onion
1/2 a Capricorn goats cheese
a little olive oil for frying
salt, pepper



Peel and chop the potatoes into small pieces. Fry in a little oil for ten minutes, stirring frequently, then add the chopped onion and ham and continue to cook for a few minutes until the onion is translucent and the potatoes are soft when stabbed with a knife.


Beat together four eggs and add milk. Quantity wise, I always break the eggs into a pint glass and beat them then top up with milk to the top of the glass so probably about half a pint. Pour the eggs over the ham/onion/potatoes. Dot with chunks of goats cheese


Leave to cook for about 7 minutes then, when the bottom side of the omelette is cooked, either transfer the frying pan to the grill (if it has a removable handle) or - what I do - use a plate to flip it over. Push the omelette mixture towards the centre of the pan so that it is the size of your biggest plate. Gently lay the plate over the top of the tortilla, place your hand on top of the plate and flip the whole thing over. (I do this over the sink in case it all goes horribly wrong !)


Sometimes the middle part sticks to the pan but just use a fish slice to scoop it up and flip it over into the gap in the tortilla. Scrape any stuck bits off the pan, add a little more oil if necessary, reheat the pan then gently slide the tortilla back into the pan from the plate.


Cook for a further two or three minutes until the other side of the omelette is cooked.


You can see the pieces of goats cheese oozing everywhere - yum !



Serve with cherry tomatoes, a side salad and crusty bread.

  1. What a great idea! I have my grandchildren twice a week after school and struggle to think of meals they will eat! This tortilla sound great and if I cook it slowly so its set's slightly more than usual Macey (age 2yrs) will be able to eat it with her fingers which she insists on doing! Hadnt thought of using goats cheese but will give it a go thanks! Merci Beaucoup (my school girl french from 50 years ago our memory is wonderful)

    1. If you let it go cold, it's still yummy and you can cut it in fingers to dip in ketchup so even more kid-friendly ! :)

  2. This looks lovely although as I'm veggie I'd leave out the ham :-) I really like spanish 'tapas' type food. Being both veggie and coeliac I tend to find it difficult to eat out in restaurants but we recently found La Tasca which have a brilliant menu where everything veggie and /or gluten free is clearly marked. One of my favourite things on their menu is their tortilla, another is their goats cheese and tomato salad - so I could quite willingly combine the two and try this lovely looking recipe. Thanks for sharing it :-)

    1. You could put red peppers and mushrooms in instead of the ham to give it some interesting colour and texture :)
