#Breakfast Watch : Day 5 - Cheese & Bacon Muffins



The Madhouse Mini Testers loved the Banana & Peanut Butter Muffins that I knocked up at the start of the week in honour of Farmhouse Breakfast Week, so I was keen to see what they'd think of savoury ones. I found a gorgeous-sounding recipe on the Shake Up Your Wake Up website for Cheese & Bacon Muffins and they are a huge hit with all members of the Madhouse family. They're lovely warm, straight out of the oven, but also keep really well for several days and are just as delicious cold. I popped one in my pocket to eat at the bus stop today and it didn't break to bits either !

Here's the recipe, if you want to give them a try :

Cheese & Bacon Muffins

Ingredients

250g plain flour
1 tsp baking powder
half tsp fine sea salt
175g cooked bacon chopped
50g mature welsh cheese
1 tsp mustard
pinch of cayenne
1 tsp thyme leaves
2 free range eggs lightly beaten
65g melted butter or 80ml sunflower oil
125ml low fat yoghurt

How to make it



Sift the flour, salt and baking powder into a mixing bowl


Add the rest of the ingredients and fold everything together with the lightest of touch, until just blended.
Do not over mix


Spoon the mixture into the prepared muffin tins


Bake in a preheated over, 180C gas mark 4 for 20 to 30 minutes until golden and firm


Remove and allow to cool in the tin for 10 minutes


Unlike the Banana & Peanut Butter muffins, these ones kept their shape perfectly even when I just dolloped spoonfuls straight onto an oiled baking tray.
