Chocolate Rice Krispie Squares recipe


Chocolate Rice Krispie cakes or Cornflake Cakes are a brilliant thing to make with the kids because firstly they're totally simple and use very few ingredients, secondly they require no baking and thirdly kids will love eating them. But what do you do if you haven't got any golden syrup ? Use honey ! We did and it worked just fine !

Ingredients :

100g Rice Krispies (or cornflakes)
60g butter
100g chocolate
3 tablespoons golden syrup or honey


Break the bar of chocolate into squares - this being Fairtrade Fortnight, make sure it's Fairtrade ! I used a bar of dark chocolate but you could use milk chocolate instead if you prefer.  


Put the butter in a microwaveable bowl and heat for 30 seconds until melted. Add the chocolate pieces and stir to melt, then reheat for 10 second bursts until totally melted and liquid. Add the honey or golden syrup and stir well.


Put the Rice Krispies into a big bowl and pour over the chocolate mixture.


Mix it all up until the Rice Krispies are evenly coated.


I remember the mixture holding together better than this last time we made them, probably because we used honey instead of golden syrup this time, so I decided to make Rice Krispie Squares rather than trying to keep it together in little mounds as Rice Krispie Cakes.


Press the Rice Krispie mixture into a greased tin. Leave to cool in the fridge for an hour.


Chop into squares and delicately remove from the tin.

These disappeared so fast that I'm going to have to make another batch tomorrow !
