Mother's day recipe : Mini Carrot Cakes with Philly Icing


Philadelphia recently sent me through some lovely-sounding recipes that are perfect for treating your mum (or yourself, and - let's face it - the kids are going to want their share too !). Even better news is that they sent me through a baking kit with the ingredients needed to try them out. Today, Pierre joined me in the kitchen to help make some mini carrot cakes - a concept that he couldn't quite get his head around until they came out of the oven and he tasted one !

Mini Carrot Cakes

Ingredients

200 g self raising flour
1 tsp cinnamon
225 g grated carrots
200 ml oil (sunflower or groundnut oil)
100 g brown sugar
85 g chopped pecans
50 g sultanas
4 eggs, lightly beaten
200 g Philadelphia Original, softened
100 g icing sugar
2 tsp lemon juice
1 tbsp lemon rind
2 tbsp pecans, roughly chopped

Instructions



Sift together the flour and cinnamon into a large bowl.


Grate a couple of carrots - Pierre thought I'd gone stark raving bonkers at this point !


Add the carrots to the flour.


Add the remaining cake ingredients and stir until well combined.


Spoon mixture into muffin cases and bake at 180 °C, Gas Mark 4 for 20 - 25 minutes.


 Cool on wire rack. (We broke one apart to show how lovely and moist they are.)



Beat the Philly, icing sugar, juice and rind together until smooth. 


 Top the muffins with the icing and chopped pecans.

(We actually left out the pecans and the lemon but they were still lovely - and the kids now believe that carrot in a cake can be nice !)

  3. I would love to try this recipe I seem to have loads of Philadelphia so will have plenty to use, the most I do is spread it over Ryvita!!

  4. Lol the do find it odd putting veggies into cakes, we have made beautiful corugette and lime and also beetroot and choccy muffins really moist
