Warm Potato & Smoked Mackerel Salad recipe


I had plans of making a Fish Pie last week but failed to find any fish in the freezer (apart from salmon fillets, which seemed like a waste) so I decided to try serving it with boiled potatoes instead. That evolved into this rather lovely and satisfying salad. Perfect for a light supper or a healthy lunch.

Warm Potato & Smoked Mackerel Salad

per person :

 4 or 5 lettuce leaves
1 tomato
3 baby gherkins
2 boiled potatoes
100g smoked mackerel (we had peppered smoked mackerel which was lovely)
1 tbsp light Salad Cream
a knob of butter (optional)

It's so simple it barely requires instructions ! Peel and boil the potatoes, or reheat them in the microwave if you're using leftovers. While they're cooking, rip the lettuce leaves into smallish pieces and toss in 1 tbsp of Light Salad Cream. Put the salad on a plate, arrange the tomato wedges and sprinkle with chopped baby gherkins. Place the warm potatoes in the middle of the plate, add a knob of butter (or leave it out if you're counting calories) and sprinkle roughly flaked mackerel on top.
