Recipe : Banoffee Cake


I bet that little slice of naughtiness got your attention ! This is the utterly delicious Banoffee Cake that we made yesterday ... and all because we had half a tin of condensed milk to use up in the fridge after making Caramel Squares !

Here's how to make it :

Banoffee Cake


ingredients :

for the cake :

12 tbsp butter
¾ cup light brown sugar
3 eggs
1&1/2 cups self-raising flour
¼ tsp cinnamon
1tsp baking powder
2 ripe bananas, mashed
1-2 tbsp milk

for the toffee sauce :

1&1/3 cups condensed milk
5 tbsp butter
1/3 cup caster sugar

to decorate :

sliced banana
grated chocolate
whipped cream

Method :


It all starts off like a classic banana bread really. Preheat the oven to 180°C. We'd run out of light brown sugar so used fine demerera sugar instead which worked fine.


Beat the butter and sugar together in a bowl.


Add the eggs, flour, cinnamon, baking powder and mix.


Fold in the mashed banana and milk.


Pour into a greased tin and level as much as possible with a spatula or spoon.


Bake in the oven for 30 minutes until springy. Leave to cool for a few minutes before turning out onto a cooling rack.


Now make the toffee sauce by putting the condensed milk, butter and sugar in a saucepan and stirring over a low heat until thick and golden.



Spread the toffee sauce over the cake. (I used half measures for the toffee sauce and still had plenty so you may want to reduce the quantities a bit - it'll be a few less calories !)



Now this is where you need to stop if you're not planning on eating it straight away. To serve, place a layer of slices of fresh banana and squirt whipped cream on top. You can finish with a sprinkle of grated chocolate if that's still not indulgent enough for you !

This would also work with other fruit - we tried with strawberries too and it was gorgeous. Even on its own with just the toffee sauce, it's a lovely moist cake that everyone loved.
