Recipe : Chocolate Peanut Butter Squares

As I'd almost run out of chocolate (and the Madhouse Mini Testers didn't want to donate any of their Easter stash !), these ended up being marbled, rather than coated with a thick layer of chocolate. They still tasted nice and were sweet enough, but I think the extra chocolate would have helped hold them together and stop them crumbling so much.

Chocolate Peanut Butter Squares

ingredients :

100g butter or margarine
100g milk chocolate, broken into chunks
1/2 cup peanut butter (smooth or chunky - your choice)
2 cups crushed biscuit crumbs
50g icing sugar

for the topping :

2 tbsp butter
100g milk chocolate, broken into chunks
100g dark chocolate, broken into chunks

In a saucepan, melt the peanut butter, butter and chocolate over a low heat.

Use a rolling pin to crush your biscuits in a ziploc bag. I used three packs (so 3 x 4 biscuits) of Belvita breakfast biscuits, but anything would work from Rich Tea to oaty hobnobs.

Add the biscuit crumbs and icing sugar to the melted chocolate mixture and stir well to combine.

Press into a greased baking tin and put in the fridge for 20 minutes.

In a saucepan (you can use the same one to save on washing up !), melt the remaining butter and both chocolates. (I used much less when I made them.) Pour over the chilled base and spread to cover.

Leave to set (either at room temperature or put it back in the fridge for a while) and delicately cut into squares.

They reminded me of Reeses Peanut Butter Cups, bearing in mind that I only ever ate them once ten years ago ! They went down very well with the whole family.
