Madhouse recipe : Pesto Chicken with Olives and Cherry Tomatoes


Another day, another recipe creation to use up the big box of cherry tomatoes that I got in this week's veg box ! Today's dish is quick and simple but packed with big flavours - definitely one I'll be making again.


Pesto Chicken with Olives and Cherry Tomatoes


ingredients (for 2 portions) :

2 chicken breasts
olive oil
1/2 jar of green pesto
a handful of green olives
a generous handful of cherry tomatoes
a sprinkle of parmesan

Fry the chicken fillets in a drizzle of olive oil and season with salt and pepper. I also added a shake of BBQ seasoning and chilli flakes but this is purely down to personal taste.

Turn off the heat, allow to rest for a few minutes and roughly chop into bite-sized pieces. Stir in the pesto sauce then gently mix in the olives and cherry tomatoes. Scatter a handful of grated parmesan over the top.

Serve with pasta, rice or crusty bread for a quick and tasty meal that is bursting with colour and flavour.
