You know those moments when you throw a totally uninspired recipe together and it works so well that the whole family say that it's utterly delicious and can you make it again? Well, that's what happened yesterday ! I opened the fridge to see what I was going to cook for lunch and was confronted with several little Tupperware boxes of leftovers. I decided to cook up a big pot of pasta and just throw everything in, regardless of whether it sounded like it should go together or not. The result was fantastic - I bet I'll never manage to recreate it though !
Love Food Hate Waste Pasta
ingredients :
200g pasta
2 leftover barbecued sausages, sliced
4 leftover slices of barbecued pork belly, diced
a large handful of cherry tomatoes, quartered
1/2 small jar green olives, halved
1/2 pack feta, diced and crumbled
1 cup leftover onion gravy
Cook and drain the pasta. Return to the pan. Add the onion gravy and warm over a low heat, stirring, until thoroughly combined. Add the cooked meat and continue to warm through, constantly stirring, for a few minutes. Add the tomatoes, olives and feta, stir to mix it all up and serve.
It sounds like it shouldn't work but it was a really nice combination. It also used up all the odds and ends of leftovers nicely so I have a nice clear fridge again !
