Madhouse recipe : Cheesy Bacon and Mushroom Biscuits


Earlier in the week, Juliette begged me to make some choc chip and bacon cookies - yes you did read that right ! (Click through to see the recipe.) While making sweet & savoury cookies, I decided to go for some full-on savoury ones too. These are lovely for breakfast or whenever you feel like a snack.

Cheesy Bacon and Mushroom Biscuits


Ingredients

250g plain flour
1 tsp baking powder
half tsp fine sea salt
175g cooked bacon chopped
3 mushrooms, chopped and cooked
150g grated cheese
1 tsp mustard
2 eggs, lightly beaten
65g melted butter or 80ml sunflower oil
125ml low fat yoghurt (I used Quark)

Preheat the oven to 180°.


Mix all the dry ingredients together in a bowl, then add the rest of the ingredients and lightly mix until well combined.


Place dollops of the mixture on greased baking trays and put in the oven for 20-25 minutes until golden brown and slightly firm to the touch.


Allow to cool slightly before removing from the trays with a palette knife. Eat warm or cold.
