Madhouse Family Faves recipe : Spicy Prawns with Chorizo & Feta

Tilda is supporting the World Food Programme for the third year running with its Mums Helping Mums initiative. The campaign donates meals to mothers in Bangladesh, helping them give their unborn children the best start in life. Low birth weight can seriously affect babies’ physical and cognitive development, so vital nutrition is essential from the start. So far, Tilda has donated over one million meals and would like to continue to grow this number.

Following the success of Tilda's Mums Helping Mums Cookbook app last year, they will be updating it with even more exciting recipes from celebrities and bloggers to help launch this year's campaign. They asked me to send over another recipe - last year I shared our Rainbow Fish Pie recipe - and will donate an additional £100 to the WFP for each recipe received. Well, I couldn't really not join in then, could I ?! Here's one of our new family faves.

Spicy Prawns with Chorizo & Feta

ingredients :

500g cooked king prawns, peeled
100g mild chorizo, sliced
1 carrot, finely diced
1/2 red pepper, chopped
1 tin of chopped tomatoes
1 large onion, chopped
2 cloves of garlic, crushed
a pinch of : salt, garlic pepper, oregano, chilli powder
100g feta

Heat a drizzle of olive oil in a wok. Add the onion, garlic and finely diced carrot and cook for a few minutes until it goes soft but doesn't go too brown. Add the chorizo and red pepper and cook for a further 3 minutes.

Add the can of tomatoes and the spices and stir to combine everything. Add the prawns and stir again.

Transfer to an ovenproof dish and crumble the feta over the top. Place under the grill for 5-10 minutes until the cheese is melted and the prawns are piping hot. Serve with crusty bread as a starter or basmati rice as a main meal.
