Madhouse recipe : Black Treacle Honeycomb

Having made Treacle Toffee with the tin of black treacle that I found lurking at the back of my kitchen cupboard, I decided to get experimental and see if it would work in honeycomb. I had a quick google and couldn't find any mentions of honeycomb made with black treacle, so I wasn't at all sure it would work. Only one way to find out, right ?! I followed the same basic recipe that I used last time I tried making honeycomb using honey or golden syrup.

Black Treacle Honeycomb


ingredients :

200g caster sugar
4 tbsp black treacle
1 tsp white wine vinegar
3 tsp bicarbonate of soda


Heat the sugar, treacle and vinegar in a saucepan over a moderate heat until it all melts and combines. It starts off resembling Christmas pudding ! Allow to simmer for a few minutes until it is molten and bubbling.


Carefully drop in the bicarb and whisk - be careful, it will start bubbling and rise up, although it's less dramatic than with golden syrup or honey !


Pour into a tin lined with parchment paper and leave to set.


This creates a denser, darker, more strongly flavoured honeycomb than the regular kind which is actually very moreish.

  5. I came looking to Google wondering the very same thing (if I could make honeycomb with treacle instead of golden syrup)- so thanks for beating me to it and then posting about it! I'll try it this weekend. :-)

  6. Hello I made honeycomb and it came out perfect. Then I thought I'll replace the honey in the recipe for treacle, it worked up looked like urs very fine bubbles, but not the same. It didn't seem to react the same when boiling. I will tweak the recipe until it's right and up date when it is.
