Madhouse recipe : Sausage, Veg & Bean Hotpot


I picked these beans up at the market last week without really knowing what they were - I think they might be broad beans - and today, when I looked in the fridge, I decided I needed to do something with them.


I enlisted a little helper for the shelling then started pulling out other ingredients from the fridge that looked like they needed using up. I found a couple of over ripe tomatoes and some courgettes that had seen better days. Time to get creative !


Sausage, Veg & Bean Hotpot


ingredients :

8 smoked sausages (such as saucisses de Toulouse)
2 onions
3 over-ripe tomatoes
2 courgettes
a couple of handfuls of broad beans
a tin of chopped tomatoes
a squirt of tomato puree
seasoning of your choice (I used Schwartz Spanish Perfect Shake seasoning)


Chop everything into large chunks. In a large pan, fry the sausages for 10 minutes, stirring every now and then. Add the onions and cook for a further 5 minutes. Add the rest of the ingredients and stir. Refill the empty tomatoes can with water and add to the pot.

Leave to simmer for 15 minutes until the sauce has thickened and reduced. This can be served on its own or with rice or mash. It's a great way of getting the kids to try vegetables they may not be overly keen on.
