Globe-cooking recipe : Patatas a lo pobre (poor man's potatoes)


I stumbled across a mention for Patatas a lo pobre (poor man's potatoes) in an old magazine so I decided to have a quick look on google to see what it was. It's a Spanish dish that is very quick and simple to throw together and which would go really well with most meat or fish dishes. 

Patatas a lo pobre (poor man's potatoes)

ingredients

2 large onions, roughly chopped
2 cloves garlic, minced
4 large potatoes, diced (no need to peel them)
1 large green pepper, deseeded and roughly chopped
2 tbsp vinegar (sherry vinegar to be authentically Spanish but I used white wine vinegar)
100ml olive oil
1/2tsp sea salt 
1tbsp freshly ground black pepper
2tbsp smoked paprika
1tbsp garlic granules
1tbsp Spanish seasoning


Put the chopped vegetables (onion, garlic, potatoes and green pepper) in a large bowl. Throw in all the spices and vinegar and mix until it's all evenly coated in spices.


Put the olive oil in a large pan - make sure there's enough to coat the bottom of the pan to help prevent the potatoes sticking. Heat the oil thenpour in the vegetables. Cook over a moderate heat for 20 minutes, stirring and scraping the potatoes off the bottom when they start to stick, until the potatoes are soft and totally cooked through.

  1. I have some potatoes to use up so I'm going to give this a go tomorrow, or at least something similar depending on the spices we have in! I'm also going to try just sticking some veggie mince in the same pan!

  2. This does look good - what would you class as "Spanish Seasoning" though? Is it a preprepared mix? Sounds good with the veggie mince too as 11 year old is refusing meat at the moment ! x

    1. I used the Schwartz Perfect Shake Spanish seasoning mix because I had some (http://madhousefamilyreviews.blogspot.com/2014/04/schwartz-perfect-shake-review.html) but you could use whatever you have - smoked paprika, oregano, garlic pepper would all work well.

  4. Ooh - that sounds good but it will have to wait a while for me to cook it as at the moment I am just starting to harvest new potatoes and the only way to eat them is boiled with a sprig of mint - simply divine!
