Cooking with Quark : Gnocchi with Wilted Spinach and Tomato & Basil Sauce


As I told you yesterday, the Lake District Dairy Co. recently sent us through a fabulous hamper of ingredients to try out their new cooking sauces. After sampling the wonderfully low-fat Spaghetti Quarkonara, we moved on to Gnocchi with Wilted Spinach and Tomato & Basil Sauce. After reading that, you barely need a recipe because it's so simple - and quick - to throw together.


Just put the gnocchi in a pot of boiling water, bring back to the boil and cook for 2 minutes. Add the spinach for 30 seconds. Drain the whole lot and put back in the pan.


Add a tub of  Quark Tomato & Basil Sauce, mix and pour into an ovenproof dish. Sprinkle over some grated cheese and pine nuts and put it under the grill for 10 minutes until the cheese has melted.


Madhouse Daddy would have liked some bacon bits in there (because he's a total carnivore) but otherwise, it got a unanimous thumbs-up - especially from me as the whole thing took 15 minutes and very little effort to get on the table. I'd never thought of adding pine nuts to this kind of dish but they added a lovely crunch and extra flavour.
