Madhouse recipe : Hidden veg tacos


Finger food is always guaranteed to go down well with the Madhouse kids (and most others, I would think) so I thought they might like the idea of eating tacos. I also decided to pack loads of extra hidden (and not so hidden) veg into them and they wolfed down the lot !

Hidden veg tacos


ingredients :

250g beef mince
2 onions, finely chopped
1 leek, finely chopped
2 large mushrooms, finely chopped
1 courgette, finely chopped
1/2 green pepper, finely chopped
spices : paprika, garlic pepper, chilli 
1 beef stock pot

pack of taco shells

shredded lettuce
tin of sweetcorn
chopped tomatoes
sauce of choice (BBQ, ketchup, salsa, sour cream, jalapeno relish ...)
grated cheddar or gruyere


Prepare the side dishes in advance (lettuce, tomato, sweetcorn ...).

In a large frying pan, fry the onions for 3 minutes in a drizzle of oil. Add the mince and cook for 5-10 minutes until browned. Add the chopped vegetables for the sauce (onion, courgette, green pepper, mushroom, leek) and cook until soft. Add the beef stock pot and a small glass of water. Add the spices to taste - I decided to use a sachet of fajita sauce that was lurking in the cupboard instead. Cook until the sauce has reduced and thickened.

Heat the taco shells in the oven for a couple of minutes then half fill with meat and top with lettuce, tomato, sweetcorn, the sauce of your choice and a sprinkle of grated cheese.

Serve with salad and rice.
