Maggi Cheesy Chicken & Leek Potato Bake review


As I mentioned a couple of weeks ago, I'm on a mission to clear out my food cupboards, especially all the sauces and sachets of seasoning mixes that are lurking at the back, so when I looked in the fridge and saw leftover cooked chicken, I thought this Maggi mix, from a Degustabox a while ago, would be ideal. (I'd defrosted a pack of chicken thighs then ended up with leftovers to use up instead, hence the pre-cooked chicken, but you could use raw chicken instead.)


As well as the sauce mix and chicken, you need 700ml milk, some potatoes, leeks and cheese. That's it so it's all store cupboard staples, which is handy when you need to throw something together at a minute's notice.


First fry the chicken and leeks. While this was cooking, I cooked the potatoes in the microwave because I wanted to speed things up (and avoid undercooked potatoes), but the instructions on the sachet say to use raw potatoes.


Mix the sauce with the milk then add to the pot. Add the chopped potatoes and leave to simmer for five minutes.


Transfer the whole lot to an ovenproof dish and top with grated (or thinly sliced) cheese.


Bake in the oven for 25-30 minutes, until the potatoes are cooked and the cheese has melted and gone golden brown.


The sauce is nice and herby and the kids loved it. It would be great for using up most other leftover cooked vegetables too (cauliflower, broccoli,carrots, ...) and you could replace the potatoes with cooked pasta, if you fancied a change.
