Speedy biryani challenge : Fruity Pork Biryani

Ben's Beginners have teamed up with the Children's Food Trust for the Big Cookathon 2015, which has been taking place from 6th-9th March, encouraging families and children to learn how to cook together at home. This year, the official recipe is a Speedy Biryani developed by BBQ extraordinaire DJ BBQ (you can see the official recipe here) and they challenged us to cook up a storm in the Madhouse kitchen and recreate the recipe. They sent us through a jar of curry sauce and a pouch of microwavable rice which made it the perfect fuss-free and super speedy weekday family meal.

The Madhouse kids aren't keen on spicy food but the korma sauce is lovely and mild and I added some apple chunks and raisins to make it even sweeter and more kid-friendly. Getting them involved in the food prep also makes them more likely to want to try the dishes they've helped make. Usually I make a chicken biryani but this is the perfect recipe for using up leftovers and, as we had roast pork yesterday, that's what I used this time. Here's our version :

 Fruity Pork Biryani

ingredients :

a drizzle of olive oil
2 onions
4 mushrooms
leftover cooked pork
2 tomatoes
1 apple, peeled and cored
2 handfuls of raisins
1 jar Uncle Ben's Korma sauce
1 sachet Uncle Ben's microwavable rice
2 hard-boiled eggs

Heat the oil in a pan and gently fry the onions and mushrooms for 5 minutes.

Add the cooked pork and the apple. Continue cooking over a low heat for about10 minutes, until the pork is thoroughly reheated.

Add the tomatoes and raisins.

Add the sauce. Reheat the rice in the microwave and add to the pot.

Stir it all through and serve with halved boiled eggs on top.

If you fancy making this for tea some time this week, you still have time to get involved in the Big Cookathon and try to win some prizes- the official Big Cookathon weekend is Friday 6 to Monday 9 March 2015. Events held at other times will still be eligible to enter, so long as the completed entry is received by the closing date of Monday 16 March 2015.

  2. I think I'll give Ben's a go. Want to introduce more spicy food to the kids without it being too hot or spicy.
