Madhouse recipe : Cheesy Spinach & Bacon Filo Pie


Jus-Rol, "the pastry people", recently got in touch and challenged me to create a yummy Spring inspired recipe using their products. You may remember we made some delicious Jus-Rol home-baked pains au chocolat recently but when I went to the supermarket clutching my vouchers, I was amazed at just how many different products Jus-Rol make - Apple Danish, Cinnamon Swirls, Focaccia, Rosemary & Thyme Puff Pastry, Pizza Base ... I opted for some Filo Pastry Sheets and headed to the Jus-Rol Recipes section on their website for inspiration, where their Spinach & Feta Filo Pie recipe caught my eye. I adapted it to create this gorgeously crunchy and cheesy spinach and bacon filo pie.


Cheesy Spinach & Bacon Filo Pie


ingredients :

1 pack Jus-Rol Filo sheets
olive oil or melted butter (to brush filo sheets)
200g bacon
1 tub ricotta
250g fresh spinach
200g grated cheese
1 jar whole roasted red peppers (or make your own)


Put a pan of water on to boil and drop the spinach leaves in, stir for 30 seconds until all covered and wilted then immediately remove and plunge into cold water. Use kitchen paper or a clean tea towel to squeeze out as much water as possible in the colander.


Fry and chop the bacon and mix into the ricotta. Mix in the spinach.


Roll out the pastry sheets.


Brush a pie tin with olive oil then layer up three filo sheets, brushing each one with olive oil once in the tin. Make sure the ends go over the edges.


Pour the ricotta, spinach and bacon mix into the pastry case.


Arrange roasted peppers on top.


Cover with grated cheese.


Cut the remaining filo sheets in half and layer them up on top, brushing each one with olive oil as before. Fold the ends hanging over the edges of the tin into the centre and brush with more olive oil.


Bake in the oven at 180° for about 30 minutes until golden brown and crispy.


Eat warm with salad. It's a wonderful mix of textures and flavours - the soft, sweet peppers, the crispy filo, the salty, chewy bacon ... hmmmm !

  1. Love Jus-rol - use it all the time. It makes the hassle out of making tarts

  3. This sounds really tasty! I'm tempted to try it but with some of the flavoured salami we got from the Bristol food festival instead of bacon - we bought a fair amount of it! :)
