Globe-cooking recipe : Kielbasa, Potato & Spinach Fry Up (Poland)

At the end of our recent work trip to Poland, while my colleagues were filling their shopping baskets with little bottles of flavoured vodka, I was scouring the shelves for Polish sausage !

I opted for the king of Polish sausages, Kielbasa.

I also bought some skinny Chicken Kabanoski (which we'd had several times for breakfast at the guest house). Juliette said (quite rightly) that they look like dogs' chew sticks, but everyone agreed that they are delicious !

Kielbasa can be eaten hot or cold so I hope it won't all get polished off before I've had the chance to try making Zurek soup. For last night's dinner, I made a simple, rustic  Kielbasa, Potato & Spinach Fry Up.

Kielbasa, Potato & Spinach Fry Up

ingredients :

drizzle of olive oil
1 red onion
1 brown onion
5-6 potatoes
250g kielbasa (or similar smoked sausage)
spinach or kale (fresh or frozen)
salt, pepper, garlic granules

Roughly chop the onions and fry them in the olive oil.

While the onions are cooking, zap the potatoes in the microwave so that they start going soft. Chop them into fairly large chunks and add to the onions.

Throw in the chopped kielbasa.

Add the spinach and toss the ingredients around in the pan so that everything is nicely mixed. Season with salt, pepper and garlic granules. That's it !
