Madhouse recipe : Honey Soy Pork & Veg Fried Rice

What do you do with your leftover roast pork? I always end up with a fridgeful of leftovers to use up on a Monday and most of the time, I just reheat the cooked meat, vegetables and potatoes in gravy and sometimes slap a puff pastry lid on top if I'm feeling frivolous ! I decided to get a bit more adventurous this time though and it worked really well.

Honey Soy Pork & Veg Fried Rice

ingredients :

a drizzle of olive oil
2 onions
2 carrots
a head of broccoli
leftover cooked pork
2tbsp runny honey
2tbsp soy sauce
2tbsp kecap (Indonesian thick sweet soy sauce)
a sachet of microwavable rice (or leftover cooked rice)

Heat the oil in a large pan and gently fry the onions for 5 minutes until they are soft and translucent.

Add the vegetables. This would be a great way of using leftover cooked veg too.

Chop the pork into small cubes and put it in a bowl with the honey, soy sauce and kecap. Toss until evenly covered and leave for a few minutes for the flavours to infuse.

Once the veggies are cooked, throw in the meat and any leftover marinade from the bowl.

Heat until the pork is piping hot all the way through. Stir through a sachet of reheated microwave rice and serve.
