Globecooking recipe : Monterey chicken (USA)


Whenever I pull a pack of chicken breasts out of the freezer, my instinct is to make a curry or something Oriental but the Madhouse kids often aren't keen, so I decided to go looking for some more family-friendly dishes. This one leapt out at me because it uses nothing but store cupboard basics that I already had in.

Monterey chicken


ingredients (per person) :

1 chicken breast
1 or 2 rashers of bacon
2tbsp BBQ sauce
a handful of grated cheese


Cook your chicken breasts. You could panfry them or bake them or grill them on the Optigrill, which is what I did.


While the chicken is cooking, fry or grill the bacon and drain on kitchen paper.


When the chicken is cooked, spread BBQ sauce over the top. (The ridges from the Optigrill are great for this !)


Lay one or two rashers of bacon on top.


Sprinkle grated cheese on top and pop under the grill for a few minutes until the cheese has melted. It only takes about 20 minutes all-in so this is great for a midweek meal after a busy day at work.

  1. Hey, blogging twin, I cooked chicken breasts on Optigrill yesterday. They were smothered in BBQ sauce. Spooky.
