Globecooking recipe : Chalupas de salsa verde (Mexico)


Chalupas de salsa verde are little homemade corn tortillas, topped with green salsa (made from green tomatillos that are widespread in Mexico), chicken and feta. The tortillas were easier to make than I expected, although you could use shop-bought tortillas if you prefer.


I needed two ingredients from my Mexican-themed Kitchen Trotter box - a pack of masa harina (maize flour) and a pouch of salsa verde, made with tomatillos, onion, garlic, chili pepper, oregano and cumin. You could probably make your own quite successfully, but it might be hard to get hold of green tomatillos.

Chalupas de salsa verde

ingredients :

250g masa harina
250ml warm water
a little lard or butter
salsa verde
leftover cooked chicken
100g feta


Mix the maize flour and the water together until it forms a ball of dough, adding a little salt if you wish. It's pretty hard going and you may need a little extra water for it to come together.


Shred the chicken. I used a couple of chicken thighs from the barbecue the day before but this would be a great way of using up leftover chicken after the Sunday roast.


Pull the dough into golfball sized pieces and roll them out on a floured board. Use a glass or a cookie cutter to cut out circles of dough. If they're too dry, dip your fingers in a bowl of water before handling them, to help moisten them.


Heat the butter/lard in a frying pan and gently fry the tortillas on each side, until they start to take on a light golden colour.


They are ready when they start to dry out and take on a cracked appearance - feel free to add a little extra butter/lard as required.


Top with green salsa, chicken, feta and half a cherry tomato.


Or use two to make a "sandwich" with cheese spread and ham like Juliette did !


Chicken and mayonnaise was another popular topping. It's a nice easy meal once you've made the tortillas because everyone can choose their own toppings and pile them up however they please.

  1. Tortillas look beautiful. I think Tesco sells Tomatillo salsa, though I never tried it.
