What's Cooking at The Madhouse? menu plan 8/9

Well, we made it through the first week back, which is always the hardest, getting back into routine after such a long break. Taking in packed lunches actually turned out to be a good idea - it gives me more time so I've managed to put all the posters up in my classroom and deal with all the paperwork without having to stay behind after work, and it's also a welcome break at lunchtime, because eating at the canteen with the other teachers means that every lunchtime invariably turns into a staff meeting ! On Mondays and Wednesdays, I have half days so will be cooking at home. Tuesdays and Thursdays are long days - I finish at 5.30 and 6.30 - so I'll be looking for quick and simple options for evening meals on those days. And with the weather the way it is, I think I'll be planning winter warmers this week !

Saturday

lunch - Time for the traditional KFC/Burger King/McDonald's option

dinner - homemade soup - Mexican maybe (spicy tomatoes and beans) or there's still a tub of shop-bought haddock chowder in the freezer

Sunday

lunch - roast dinner, either chicken, or some gammon that I have in the freezer

dinner - leftovers from lunch or fridge grazing - or possibly chicken & veg soup if we had a roast chicken

Monday 

 lunch - leftover meat with pasta or made into a pie with mash

dinner - Mongolian beef with rice and veggies

Tuesday 

packed lunch - leftover Mongolian beef with salad (or tuna salad if there's none left)

dinner grilled salmon with veggies and rice for the grown-ups, mac & cheese with sausages for the kids (Juliette will have to choose because she likes both !)

Wednesday 

lunch - spaghetti carbonara

dinner - pork casserole in the slow cooker - not sure what exactly yet - pork and bean, pork & pineapple, or just a traditional pork, veg & potato in gravy type dish? Time will tell !

Thursday 

packed  lunch - I only have half an hour for lunch max so a meal bar and a piece of fruit, then a yogurt mid afternoon if I'm hungry at breaktime

dinner - chicken & leek filo pie with mash

Friday  

packed lunch - cheese, ham & salad sandwich

dinner - orange chicken with stir fried veg

  1. Ahh! I'm glad the packed lunches worked out well.
    I don't think I could choose my favourite when it comes to the pork casserole. All the options sound very tasty. x

  3. Great plan for the week ahead! Is Mongolian beef very spicy? I don't quite remember, off to have a look online.

    1. Not at all - it's sweet and Chinesey tasting. I bumped it forward to last week for the BritMums challenge so I'll be posting the recipe later :)
