#KitchenClearout June roundup and July linky

I'm meltiiiiing ! It's so hot today, even though I had the foresight to keep the shutters closed this morning when I went to work so the house is relatively cool, compared to yesterday. It's been far too hot for baking though, so I haven't made much progress in clearing out my kitchen cupboards lately. I do have a lovely roundup of exotic dishes to share with you this month though - maybe everybody is starting to think of upcoming summer holidays because we all seem to have joined in with the globecooking theme this month !

Starting us off with the perfect summer recipe was Jess from Jess Eats and Travels with her Easy Jerk Chicken Kebabs, inspired by the cuisine of the Bahamas.

Firing up the barbecue is hot work so if you need some cooling down, Jess has the perfect cocktail to go with it : a Pineapple & Orange Rum Slush. I could drink one of those right now to help cool me down !

Singaporean Teochew Duck Rice was a #readcookeat recipe inspired by Life As A Banana and as well as being quick to prepare and mightily tasty, it also used up lots of odds and ends of condiments and spices that were cluttering up the cupboard (Chinese five spice, galagal, sesame oil, soy sauce).

Jess took our tastebuds to Bahrain next with her Bahraini Fish Ragout with Rice, which uses the mild spice blend baharat. I just happen to have a tub in my spice rack - perfect !

Jane from Onions & Paper gave us some great salad inspiration, with her Classic American Cobb Salad and Spicy Sweetcorn Salad, both perfect for clearing out the fridge.

Jess's Bengali-inspired Spicy Tomato Chutney is a great accompaniment for summer barbecues and is perfect for using up a glut of tomatoes.

Galina from Chez Maximka had a good clearout in her baking cupboard and the result was this beautiful Curd Cheese Cake with White Vanilla Chips.

After the Bahamas, Bahrain and Bengal, Jess was off to Barbados with this Quick Caribbean Beef Curry.

Coming home from school laden down with cherries from the canteen, I made some Choc-cherry muffins which were very tasty - I kept grabbing one to eat at the bus stop for breakfast !

And finally, Avgolemono, a Greek lemon-chicken-egg-rice soup, may have been a bit of a let down but it did use up the leftover chicken from the Sunday roast.

Thanks to everyone for taking part again this month. Hopefully we've given you some inspiration for creating tummy-fill, not land-fill, with the odds and ends lurking in your kitchen.

Feeling inspired and fancy joining in? Have a rummage through your kitchen cupboards, spice rack, freezer or fridge and see if there's anything that needs using up, then come and share your creations with us. Or if it's way past its sell-by date, throw it in the bin and come and tell us what you found ! It would be great if you could add my badge and a link to this post for anyone else who wants to get involved.

  1. I agree with you it is way to hot to be cooking in this weather, you have still made some delicious dishes, and the Pineapple & Orange Rum Slush looks so refreshing, I must try it xxx

  2. I'm feeling all embarrassed now because my recipe title was a character too long so I had to take out one of the apostrophes, and I get very hot under the collar about incorrect use of its and it's! Anyway, lots of lovely recipes in the gallery this month and I agree about it being too hot to cook - my recipe this time only needs about 5 minutes at the stove though.

  3. Kebabs are yummy. We always do veggie ones with onion, courgette, peppers and tomatoes - an extra option for any vegetarians or vegans. If using tomatoes don't put whole baby ones on the stick as the juice heats up beyond boiling point and can seriously burn your mouth. If using wooden kebab sticks, don't forget to soak them in water for 30 minutes before use.

Too hot for cooking, mainly living on salads, but will be getting the slow cooker out later in the week. It keeps the heat down in the kitchen.

The beef curry recipe has joined the choc-cherry muffin recipe as 'must tries'.
