Madhouse recipe : Tex-Mex Cowboy Dinner


I'll be the first to admit, it's not a looker, but it did taste great and it was perfect for using up some odds and ends from the fridge. It's basically a twist to the classic cowboy breakfast of bangers and beans - always a kid-friendly crowd-pleaser !

Tex-Mex Cowboy Dinner

ingredients :

4 sausages
1 onion
leftover cooked potatoes
can of baked beans
can of red kidney beans
garlic salt, paprika, cumin


Fry or grill the sausages and drain off excess fat. Reserve.


Use a piece of kitchen roll to remove most of the fat, then fry one chopped onion in the sausage pan.


Chop the cooked potatoes into bite-sized pieces and add to the pan. Cook for 5-10 minutes until warmed through, sprinkle over the paprika, garlic salt and cumin, then chop and add the sausages.


Pour in the two tins of beans. Heat through, giving it all a good stir, to combine everything and prevent sticking.


Top with a little grated cheese if you like.
