Madhouse recipe : Fruity oat crumble


I think we went straight from the summer to the autumn this week - it's been cold, rainy and generally quite bleugh ! Instead of going out at the weekend, I decided instead to have a rummage through my food cupboards and the fridge. I came across some porridge and Ready Brek, as well as some plums that were attracting far too many flies. I also found the end of a punnet of raspberries and most of a jar of blackberry & apple jam in the fridge - perfect !

 Fruity oat crumble 

ingredients :

200g butter/margarine
180g white sugar
4tbsp demerera sugar
pinch of salt
110g Ready Brek
90g porridge oats
jar of jam (blackberry & apple)
leftover fruit (raspberries, plums)


Preheat the oven to 180°C. In a bowl, mix together the butter or margarine and the white and demerera sugars. Add a pinch of salt.


Mix in the Ready Brek and the porridge oats. (I was using up ends of packets - feel free to change the proportions !)


Remove a few spoonfuls of mixture then press the rest into the base of a pan.


Spread with the jam.


Add the raspberries - I also added some chopped plums but forgot to take a photo !


Scatter over the remainder of the pastry.


Bake for about half an hour or so.


Leave to cool in the pan slightly, then remove and cut into squares. Serve on its own, or with custard, cream or ice cream :)
