I told you a couple of days ago about "Mexican World Tour" being one of the culinary trends mentioned in the 2014 Flavour Forecast put together by McCormick, the mother-company of UK herbs and spices brand Schwartz. I decided to come up with a recipe combining Mexican and Italian cuisine in this Mexicanestrone Soup, a Mexican twist on the classic Minestrone soup. It's a really chunky, warming, satisfying soup and is also a great way of using up leftover pasta.
Mexicanestrone Soup
ingredients :
2 onions, chopped
1/2 green pepper, chopped
2 tins chopped tomatoes (& 2 tins water)
1 large tin red kidney beans
1 tbsp Schwartz Oregano
1 tbsp Schwartz Garlic Minced
1 tsp Schwartz Onion Salt
2 tbsp Schwartz Chillies Crushed
2 tbsp Smoky Chipotle Sauce
1 tbsp Schwartz Smoked Paprika
1 Schwartz Whole chilli
2 Bay Leaves
Leftover cooked pasta
Diced Feta
In a large pot, gently fry the onions and green peppers in a little olive oil, until they are softened but only slightly coloured.
Add the two tins of tomatoes and two tins of water, the kidney beans and the spices. Stir then add the bay leaves and whole chilli. Leave to simmer for 1/2 hour.

Remove the bay leaves and whole chilli and add the leftover cooked pasta. Stir and leave to simmer for a further ten minutes.
Serve in bowls and top with diced feta. This can be accompanied with strips of tortilla to dip into it.
