Madhouse recipe : Sweet & Spicy Curried Mince

A few weeks ago, I posted a recipe for Bobotie, a South African dish, that I had made using some of the ingredients from my South African-themed Kitchen Trotter box. Several of you mentioned that you loved the sound of it but didn't have all the exotic ingredients. Tonight, I decided to recreate a similar but simplified dish, using nothing but store cupboard basics and using up leftovers from the fridge and it was lovely, not to mention really quick and easy to throw together.


Sweet & Spicy Curried Mince


ingredients :

500g minced beef
1 clove garlic, crushed
2 onions, chopped
1 yellow (or red or green) pepper, chopped
75g raisins
1 Knorr Curry Flavour Pot
3tbsp chutney (I used up the remains of a jar of Carrot & Tamarind Sweet & Piquant Chutney that I reviewed here)
3 tbsp apricot jam
a pinch of rock salt and back pepper
leftover cooked rice (or a sachet of microwavable rice)

Gently fry the onion and garlic in a drizzle of olive oil for 5 minutes. Add the mince and peppers and cook, stirring to prevent it sticking, until the meat has all turned brown.

Reduce the heat, add the Knorr Curry Flavour Pot and once it has melted, stir it in to the mince. Add the raisins, chutney and jam and stir to combine everything.

Season with salt and pepper and taste - add a little more mild curry powder if it needs a bit more zing or tastes too sweet.

Just before serving, stir in any leftover cooked rice you may have, or heat a sachet of microwavable rice and stir it in to the meat mixture.
