Madhouse Recipe : Chocolate Terrine


You may remember that a couple of weeks ago, it was Madhouse Daddy's birthday and I made a mango sponge cake. We ate most of it but it went stale quite quickly so, rather than throw away the last couple of slices, I decided to use them as the basis of another dessert. I looked in the baking cupboard and found two bars of Dr Oetker cooking chocolate (one dark, one milk) from a recent Degustabox. An idea was born !

Chocolate Terrine

ingredients :

a few slices of stale cake, broken into crumbs/small pieces
a handful of mini marshmallows
a handful of cashew nuts
a handful of dried cranberries
2 bars of Dr Oetker cooking chocolate (one dark, one milk)
a generous squeeze of maple syrup
hundreds and thousands to decorate


Put all the dry ingredients into a bowl.



Melt the two bars of chocolate and maple syrup in the microwave (or in a bain marie over a pan of boiling water).


Add the chocolate to the bowl and stir everything up.


You may get arm ache halfway and need to recruit big sister to help finish off !


Spray a loaf tin with Cake Release Spray.


Press the mixture into the tin and cover with hundreds and thousands.



Put in the fridge for a couple of hours to set and cut into slices to serve. You could make this look extra special by putting whole bananas inside and pressing the mixture around them. This would create rather pretty whole slices of banana when you cut it up (but sadly, all the bananas in the fruit bowl had already been munched !)
