Madhouse Recipe : Mango sponge cake


Real Foods got in touch a couple of months ago and asked if I'd like to pick one of their products to try out in The Madhouse Kitchen.


I opted for their Sun Dried Organic Mango Strips. These sounded like the perfect ingredient to jazz up a simple sponge cake in honour of Madhouse Daddy's birthday this week. I chopped them up with a pair of scissors - they're pliable rather than tough and brittle so this works really well - and I must admit, me and the Madhouse Mini-testers also nibbled quite a few bits straight out of the bag as we were cutting too ! They're lovely and sweet with a natural fruity taste that really appealed to the kids so they make a great healthy snack in place of sweets or biscuits.

Here's the recipe we used :

Mango sponge cake (Madhouse Daddy's Birthday Cake)



225g margarine
225g caster sugar
2 tbsp vanilla paste
pinch of salt
4 eggs 
250g self-raising flour 
100g dried mango, chopped


Cream the margarine and sugar together. Add the vanilla paste and salt, then the eggs one at a time. Finally mix in the flour and mango pieces.


I used the Dr Oetker Cake Release Spray from my Degustabox for the first time and was really impressed, even if it looks a bit weird when it comes out of the can.


Pour the cake batter into a cake tin and bake in the oven at 180° for 30-40 minutes until a knife comes out clean.


Apart from sinking in the middle a bit, it came out perfect.


This being a birthday cake, we wanted to make something a bit special so it was the perfect time to raid the baking cupboard and discover the fabulous range of cake decorating goodies that Cake Angels had sent us through to have a play with.


The Madhouse Mini-testers helped me pick out some vanilla icing and pretty yellow flower decorations.


Pierre helped me stick on the flowers and was very proud of his (our) handiwork.


Juliette put the candles on and excitedly waited to surprise Madhouse Daddy when he got home from work !
