Madhouse recipe : #KitchenClearout Fridge Cake


My #KitchenClearout continues and this weekend, I decided to let the kids loose on the contents of my baking cupboard and get rid of as many nearly empty things as possible. The obvious solution was ... fridge cake. I'll give you a recipe but the whole point is using up the odds and ends from your cupboard so just throw in whatever you've got.

#KitchenClearout Fridge Cake

ingredients :

3 bars of white chocolate (or milk or plain)
4tbsp margarine or butter
a big drizzle of golden syrup
stale cake (or digestive biscuits)
a few handfuls of raisins, dried cranberries, hazelnuts ...
hundreds and thousands, silver balls, ...

You could also use any combination of : cornflakes, mini marshmallows, chocolate chips, honeycomb pieces, glacé cherries, ...


First break the chocolate into pieces in a bowl. Add the margarine and golden syrup and melt in the microwave.


Break the biscuits or stale cake into small chunks in a separate bowl.


Add the dried fruit and nuts.


Have a rummage through the baking supplies to see what else looks like a good addition !


Mix in the melted chocolate mixture. Make sure it's moist enough to clump together or it won't set properly.


Line a dish with baking parchment and press the mixture down firmly with a spatula.


Top with hundreds and thousands, silver balls, chocolate drops and whatever else takes your fancy.


I'm not sure the raspberry sugar was entirely necessary as it was already incredibly sweet but if you give the kids free reign, you can't complain afterwards !


The only hard part is waiting patiently for a couple of hours while it sets in the fridge !


Remove the parchment from the dish and cut into squares with a sharp knife. A little goes a long way as it is very sweet but the kids love it !
