Madhouse diaries : A wintry walk along the beach

A couple of weekends ago, Sophie announced that she wanted to go for a walk in the dunes and look for World War II shrapnel and relics. That may sound unlikely but we live in Dunkirk and, as it's been windy lately, the dunes have probably shifted a fair bit and may well have uncovered some bits and bobs that have been lying under the sand amongst the bunkers for all that time. We bundled up in jumpers and headed off to the bus, getting off at the maritime hospital/sanatorium stop. This took us to an area I'd never seen before - the site of Military Cemetery #2. There is nothing left here now but reading the sign, we learned that 120,000 soldiers were treated here in 1940 and 803 died of their wounds. By 1948, there were 936 graves, including 130 British, 794 French and a handful of Belgian, Spanish and Dutch victims. These have now all been relocated and buried elsewhere but it's still spine-tingling thinking about the scale of the loss of life during those dark times.

Fortunately, the fabulous views at the beach lifted our spirits. After following a winding path, you can't see the sea at all until you reach a section cut through the dunes giving access to the beach.

It was a chilly day so we had the beach pretty much to ourselves, apart from the seagulls braving the icy water.

Within a few metres, we started spotted big blue jellyfish washed up on the beach - we'd seen a news report a few weeks earlier warning about these Portuguese man of war jellyfish that have a vicious sting.

We often see transparent jellyfish swimming around in the port of Dunkirk but these blue ones are bigger, much firmer, more compact and they hold their shape in perfectly round disks. The kids were fascinated, flipping them over with their feet to see the wibbly tentacles.

We also started spotting dozens and dozens of these things, which I think are sea urchins, washed up on the beach. The kids loved the starfish shape dotted on the top and collected some to take home, but we soon discovered that they stink of rotten fish !

It was only just after four o' clock but the sun was starting to sink lower in the sky and I wanted us to move along, so that we'd be back by the more civilised end of the beach, away from the bunkers, before it got dark.

Down this end of the beach, you always feel like you're the only people in the universe, alone with the big sky and the ghosts of all those World War II soldiers who never made it home.

You could walk along the beach as far as Belgium (a few kilometres away) without barely seeing another soul.

The tide was on the way out and we could see the remains of one of the Operation Dynamo wrecks peeking through the top of the surf. Not as good as the one we spotted back in the summer but nevertheless still pretty impressive that it's there after all this time.

Pierre and Juliette had fun climbing up and jumping off the smaller bunkers on the beach. It always makes me smile to see them using the sad remains of a major war as a playground.

They are also frequently used as a canvas for street art and existential graffiti to contemplate as you walk along the beach.

They have been there for the best part of eighty years but I get the feeling that nature is slowly starting to break them down. We spotted more cracks, a few parts seem to have fallen down on the beach that we think were up in the dunes before and this one is flooded when the tide comes in.

They are stark remembers of what went on on these glorious beaches.

Some of them are actually quite picturesque, in a strange way, framing the seaside views behind them.

This is one of the ones that seems more broken than the last time we saw it, with the whole front wall section on the ground.

And another one, whose front wall is now separate from the rest of the structure.

I wouldn't want to be standing too close when these things fall apart !

I mentioned that we'd had strong wind and exceptionally big tides lately and we were shocked to see a whole new building sticking out of the base of the dunes that we'd never spotted before. It makes you wonder what else is hiding under the sand and the sea in this area - I already know that there are about a dozen wrecked ships left over from Operation Dynamo in the shallows that have been charted.

It's hard to spot in the photo but Sophie pointed out a rainbow in the clouds - this is called  an iridescent cloud and is caused by the presence of very tiny ice crystals or water droplets in the air, which cause light to be diffracted or spread out. They're supposed to be quite rare but we see them at least a couple of times a year, for some strange reason.

The sun was starting to set so we picked up the pace for the last stretch of beach.

The "disco ball" bunker covered in shards of broken mirror always looks spectacular but at sunset, it is particularly stunning.

The kids couldn't resist taking selfies with their shattered reflections.

I was more interested in getting fragmented pictures of the landscape.

This is one of the less dilapidated bunkers so you can go exploring inside, as long as you're careful.

This rather sinister picture painted just inside the door put the kids off though - they are quite creepy places, even without the street art !

Just as the light started fading, our bus came around the corner so we headed for home, and a nice mug of hot chocolate to warm up !

#KitchenClearout November roundup and December linky

It's a bit crazy to think that this month's #KitchenClearout linky will probably end up bringing in various ways of using up the leftover Christmas turkey and accompaniments, mincemeat and all the other festive odds and ends lying around - how can we be into December already ?! Well, in the meantime, I've been making space in the baking cupboard, and it looks like I'm not the only one. Here's this month's roundup of tasty ways to use up what's been hanging around in the kitchen cupboards, freezer and fridge.

It's all systems go for Christmas now but back at the start of this month's linky, I shared my ghoulishly realistic Halloween recipe for witch's finger biscuits, which used up the end of a bag of icing sugar and the last bit of some strawberry jam.

Sweet & Sticky Chinese Chicken & Vegetables was a surprisingly successful throw-it-all-in-the-pot recipe that finished off a box of cornflour, as well as various condiments that were taking up space in the cupboard.

I'm not a huge fan of cottage cheese but I'd happily munch on one (or several !) of Galina's Cottage Cheese Biscuits, over at Chez Maximka.

I decided to use up a box of pearl barley that was lurking at the back of the cupboard and the result was a tasty pearl barley, bacon and veg "risotto", perfect for a chilly winter evening.

Another surprisingly good "what's taking up space in the cupboard today?" recipe was Beef & Veg Ramen Stir-Fry - this used up lots of odds and ends including a ramen noodle soup kit and some leftover steak.

A surprised shriek of "that's not pumpkin !" when I went to make pumpkin soup evolved into a delicious meal of spaghetti squash with cherry tomatoes and chorizo. Nothing goes to waste at The Madhouse ! I'm not entirely sure it was spaghetti squash either, but it was tasty, whatever it was.

A warming bowl of German-inspired Potato Soup cleared out the veg compartment of the fridge.

Halfway between lasagne and moussaka, a Mince & Potato Layered Casserole used up some pre-baked potatoes.

My first festive bake of the season ! Christmas Cake Cupcakes used up the end of a bag of marshmallows.

Alison at Dragons and Fairy Dust has a lovely idea for an edible Christmas gift - chocolate orange hearts. They look like a great little project for the kids to make ... and eat !

An excess of dried fruit in the baking cupboard was transformed into a Moroccan-inspired Lamb, Prune & Dried Apricot Tagine - the perfect winter warmer.

Another product that was lurking at the back of the baking cupboard was a bag of coconut sugar, along with some other ends of packets, which I transformed into Apricot & Cashew Nut Coconut Sugar Cookies.

Fancy joining in? Have a rummage through your kitchen cupboards, spice rack, freezer or fridge and see if there's anything that needs using up then come and share your creations with us. Or if it's way past its sell-by date, throw it in the bin and come and tell us what you found ! It would be great if you could add my badge and a link to this post for anyone else who wants to get involved.

December essentials to see us through to Christmas (review roundup)

December's here ... like it or not, we're in the starting blocks for Christmas and New Year celebrations ! I always find that this is one of the busiest times of the year, what with trying to squeeze in Christmas crafts and baking projects or visits to see the Christmas markets and pretty lights, along with all the gift shopping, wrapping and delivering, not to mention all the usual work and home to-do lists. Phew, I'm tired just thinking about it ! Here are a few of the products that we've discovered recently that will (hopefully) help us sail through December happy, healthy and relatively chilled out.

OK, first potential stumbling block of the festive period - did you remember to buy an advent calendar for your kids ? I had a giggle with the deputy head today because we were comparing notes and discovered that her daughter (aged 17 and a half) is just like Sophie (aged 16) and still wants an advent calendar ! This Teletubbies Advent Calendar from Bon Bon Buddies not only has a cute picture featuring the four colourful Teletubby chums on the front and a milk chocolate hiding behind each door, it also has news of a competition to win a tablet every day this Christmas with #LoveMyAdvent. Teletubbies say Eh-Oh Ho-Ho-Ho ! (Was £1 but now available at a reduced price in a number of shops, including B&M stores.)

If the chocolates hiding behind the advent calendar doors aren't big enough to satisfy your chocolate cravings, I highly recommend sitting down with a family-sized, 300g bar of Cadbury Dairy Milk Big Taste Choco Biscuit Crunch - deliciously crunchy biscuit sandwiched between two layers of cocoa creme and milk creme filling. I thought it might be just a bit too much but it's lovely, with a great mixture of flavours and textures and an intense chocolatey flavour. (RRP £3.49, available in ASDA.)

As a teacher, one of my big challenges is fighting off the dreaded lurgy in the run up to Christmas. As we get deeper into the winter weather, I seem to have more and more kids coughing and sneezing all over me - they may be aged between 11 and 16, but I still seem to spend half of my time in the classroom reminding them to cover their mouths rather than spreading their germs. I know that Christmas is a time for sharing, but that's one thing I can do without, thank you ! Washing your hands frequently in soap and water is the best plan of attack (or rather defence) but it's not always possible to pop out of the classroom, so Milton's antibacterial surface wipes and antibacterial hand gel have been a godsend - for wiping down desks that kids have been keeping snotty tissues on to throw in the bin at the end of the lesson, then my hands after retrieving the ones stuffed down the back of the radiators (yes really - yuck !). They kill 99.9% of germs in seconds with no need for water and are clinically proven to reduce the risk of spreading infection.

BioCare also sent us a selection of products from their extensive range of vitamins and supplements, suitable for the whole family and designed to make sure your body is fighting fit for the colder months, including everything from vitamin D for the dark winter months, hair and nail supplements, energy boosters and probiotics for gut health. We received : Vitamin C Rosehip Complex (150g - enough for 30 doses - £15.95) - a pleasant tasting vitamin C powder to dissolve in water with minerals such as zinc and manganese, bioflavonoids and berry extracts; Vitamin B6 60 Veg Capsules (£9.95) - contributes to the normal metabolism of energy, protein and glycogen, as well as the normal function of the nervous and immune systems and the regulation of hormonal activity; Everyday BioAcidophilus - 28 Capsules (£13.96) - contains natural prebiotics to feed the live bacteria with no need for refrigeration so it can be kept in your bag or desk drawer for on-the-go use; Children's Red Berry BioMelts - 28 Sachets (£17.95) - Great tasting, melt on the tongue powder in convenient stick sachet  form that children will love to take themselves every day, with live bacteria and vitamin D for everyday and immune support in one hit; EyeCare Plus 60 Capsules (£25.55) - an innovative, antioxidant-rich blend of vitamin A, minerals, bilberry, ginkgo biloba, lutein & grapeseed extracts in a capsule, to help contribute to the maintenance of normal vision, as well as the immune system; Zinc Citrate 90 Tablets (£6.40) - with many general health benefits, including its contribution to normal cognitive function, maintenance of normal hair, skin, nails and bones and normal fertility and reproduction. They're all easy to take and - fingers crossed - we've all managed to avoid the epidemic of tummy bugs and nasty colds that are going round at the moment, so I think they must be helping with boosting the immune system.

The temperatures have dropped and it seems to have been permanently drizzling for the past few weeks, so we have a bit of a new routine after the school run : a nice bubble bath to warm up, followed by snuggly pyjamas and a big mug of hot chocolate. Our latest bath buddy is Dexter the bath mitt and his Super Bubbly Dragon Fruit Bubble Bath from Good Bubble.

As well as being ultra cute and smelling lovely, the limited edition gift set (RRP £8) includes Good Bubble's award-winning, free-from bubble bath that is suitable for newborns and upwards. It's made with real Dragon Fruit extract and at least 98% naturally derived ingredients to help maintain the skin’s natural moisture. Dermatologically and opthalmalogist tested for a kind-to-skin and tear-free bath time, it's also registered with The Vegan Society and is never ever tested on animals. Best of all, it provides lots of lovely bubbles and makes the bathroom (and the kids) smell nice.

Have you discovered any new family-friendly products to help see you through the winter months in tip-top form?

What's Cooking at The Madhouse? menu plan 1/12

In French schools, at the end of each term, all the teachers of each class get together, along with the pupil and parents representatives and the headmaster or deputy head, to discuss the behaviour and marks of each pupil, as well as any problems. I have seven classes so that means I have one or two meetings after school for the whole of next week (except Wednesday). There won't be a great deal of cooking going on, especially as Friday is also the Christmas party at Madhouse Daddy's works - there will be a magician and Santa giving out presents, plus lots of nibbles and champagne/fruit juice. Not really worth doing a menu plan this week, is it ?!

Saturday

lunch - Time for the traditional KFC/Burger King/McDonald's option

dinner - lentil & bacon soup

Sunday

lunch - roast dinner, probably chicken

dinner - chicken soup with leftovers from lunch or fridge grazing

Monday

 lunch - spaghetti carbonara

dinner - something in the slow cooker - pulled BBQ chicken & rice maybe?

Tuesday

dinner - something from the freezer or a can of soup

Wednesday

lunch - cheesy rice and broccoli bake with beefburgers

dinner - baharat spiced duck with noodles

Thursday

dinner - smoked salmon bagels

Friday

dinner - nibbles at the Christmas party

Madhouse recipe : Apricot & cashew coconut sugar cookies

After spending far too much of my weekend marking, I decided to unwind and enjoy what was left of my Sunday afternoon by having a good baking session. It was already getting towards the end of the afternoon though so I needed something quick - a cookie recipe was definitely the way to go.

Rummaging through the cupboard, I came across a bag of coconut sugar, along with some ends of bags of dried apricots and cashews. Time to experiment. Coconut sugar is very similar to brown sugar in taste and colour - it doesn't taste of coconut at all, it tastes more of burnt sugar (in a pleasant way). The cookies had a lovely flavour from the sugar, but it did overpower the apricots and cashews, although they did add some nice crunch and chewiness.

Apricot & cashew coconut sugar cookies

ingredients :

95g softened salted butter
90g coconut sugar (or brown sugar)
1 egg
150g flour
1tsp baking powder
handful of dried apricots
handful of cashews

Cream together the sugar and butter.

Add the egg.

Then the flour and baking powder.

Roughly chop the apricots and cashews. Stir through the cookie dough.

Place dollops of the mixture on a baking tray lined with baking parchment.

Bake at 180° for 10 minutes. They will still be soft when they come out of the oven. Leave to cool before transferring to a wire rack to cool completely.

I haven't cooked with coconut sugar much but these came out really nice, in terms of flavour and texture. It gives a lovely colour too and is low GI so it's supposed to be a healthier swap for regular sugars.

Adding to this month's #KitchenClearout linky as it used up some coconut sugar, as well as ends of bags of dried apricots and cashews.

Fab festive beauty buys from Baylis & Harding (review)

Christmas time is full of great pairings - the holly and the ivy, mistletoe and wine, turkey and stuffing, ... Well, here's another one - Baylis & Harding. Just one look at their gorgeous festive offerings had me mentally ticking off most of my remaining Christmas shopping list. From beautiful packaging to lovely scents, they have it all, including affordable price tags. Here's a roundup of some of their lovely products for Christmas 2017.

Baylis & Harding’s La Maison Crème Brulee & Cocoa Luxury Gift Basket (RRP £18, currently only £12 at Ocado) makes a super stylish gift that is bound to be a favourite this Christmas. Nestling inside a beautiful lined wicker basket is a Body Cleanser & Polisher, 300ml and a Body Butter, 350ml, both fragranced with Crème Brulee & Cocoa, a deliciously indulgent, feel-good scent with warm vanilla and coca notes which is truly irresistible, whatever your age. It appeals as much to me as to Sophie (age 16) and Juliette (age 12), so will be a winner whatever the age of the recipient.

Ideal as gifts for teachers, secret Santas and stocking fillers, this duo of fantastically packaged products are chic as Chanel but cheap as chips ! The red Christmas tree-shaped box on the left contains Baylis & Harding’s Midnight Fig & Pomegranate Luxury Body Wash, with an exquisite, exotic scent of rich dark fruits, berries and pomegranates. I love the cut-away Christmas tree shape on the packaging that allows you to see through to the product inside. (RRP £8, currently £4 on Ocado or as an add-on item at amazon.) On the right is another gift idea with wow-factor - Small Bath Tub Signature Sweet Mandarin & Grapefruit, a cute miniature slipper bath, containing 50ml shower cream and 30ml body butter with a lovely invigorating Sweet Mandarin & Grapefruit fragrance. (RRP £6).

The packaging of the next gift set instantly reminded me of American popcorn carts and, while the Sweet Caramel Popcorn fragrance would be in-keeping with this line of thought, the circus animals and performers on the box and the name soon made me realise that it is supposed to be a big top. Ladies and gentlemen, boys and girls, I give you Beauticology Carnival Treats Perfect Partners! After all the festive over-indulgence, January is invariably the time that everyone kicks off a New Year diet, so the 300ml Candy Apple Body Wash and 250ml Sweet Caramel Popcorn Body Butter are a great, calorie-free way to indulge your sugar cravings ! (RRP £10, currently £6.99 on amazon)

The men in the family don't need to feel like they're missing out either - the Baylis & Harding Mens Sport Citrus Lime & Mint Small Wash Bag Set is the perfect size for throwing in a gym bag or packing in a weekend/overnight bag and contains a 50ml Aftershave Balm and a 100ml Hair & Body Wash, both with a refreshing, woody fragrance of lime, bergamot and mint. The distressed denim-look wash bag is really stylish and I'll be pinching it for myself if Madhouse Daddy doesn't end up using it ! (RRP £6.99)

I love the Luxury Hand Wash range, which all look snazzy, smell nice and leave my hands feeling soft. I currently have one on the go in the bathroom and in the kitchen and they're cheap enough that I don't mind sharing with the kids ! The Midnight Fig & Pomegranate Luxury Hand Wash, with added moisturiser, has had a gorgeous festive makeover just in time for Christmas. You can currently pick up a big 500ml bottle for a bargaintastic £1.50 at Superdrug (was £2.15, which is still a great price).

And last but by no means least, they have a beautiful range of Festive Scented Candle Jars with Christmas Tree Lids. We got a Winter Spruce & Berries-fragranced one in a green jar but they are available in a variety of fragrances and colours. They look magnificent, add a lovely delicate festive fragrance to your home and there's something about a candle that makes a room look cosy and inviting on a cold winter's evening. Each candle has an impressive 38 hours burning time. (RRP £10, available from Tesco and amazon.)

You can't go wrong with luxurious and wonderfully fragranced smellies as gifts - after all, everyone has to wash ! - and Baylis and Harding have come up with a range that will appeal to all ages and both sexes. I think they've outdone themselves with their funky festive packaging this year. I'd be happy spotting any of these under the tree with my name on !
