Globecooking recipe : Bulgur pilavi (Turkey)


Bulgur pilavi is the Turkish name for bulgur pilaf and it's one of the most common side dishes that you see in Turkey, often served alongside kebabs or grilled meats. 


I had a box of Bulgur Wheat with Vegetables in the cupboard, but you can use plain bulgur wheat too.

Bulgur pilavi

ingredients :

drizzle of olive oil
1tbsp butter
2 onions
1 green pepper (or half a green pepper and half a red pepper)
salt and pepper
2 cups of bulgur wheat
1/2tsp ras el hanout (optional - to give it a little kick)
1tbsp tomato puree or red pepper paste
chicken stock (or boiling water)
chopped mint (to garnish)


Heat the oil and butter in a large pan. Add the peppers and onions and fry for 10 minutes, stirring, until cooked through and soft, while retaining a little crunch. Stir through the tomato/pepper paste and the ras el hanout, if using.


Pour in four cups of boiling water or stock and two cups of bulgur. Some people like to add a couple of chopped tomatoes - I didn't as I was serving it with a tomato-based dish, and I also had some dried tomatoes in my bulgur mix already.


Cook for ten minutes until the water/stock is completely absorbed. Sprinkle with chopped mint just before serving. This can be eaten hot or cold.

  1. It sounds very similar to bolognese/shepherds pie, I would definitely try this as my children love mince based foods such as lasagne etc xXx

  2. I don't often cook with bulgur. Love ras el hanout spice, it is so aromatic. Lovely side dish
