What's Cooking At The Madhouse ? menu plan week 25


Being back to work is tricky at the moment, as my timetables is changing every week. In theory, this latest timetable will run until the end of term in three weeks, so I'll be working on Mondays, Tuesdays and Thursdays, but staying at home on Wednesdays and Fridays - I can cope with that ! Last week, I stuck to the menu plan all week. Let's see if we can do the same again this week :)

Monday

dinner - chicken with a bacon and cream sauce, served with mash and veg

Tuesday

dinner- chipolatas with couscous and Mexican veg

Wednesday

lunch- chicken burgers with rice & leftover Mexican veg

dinner- Spanish chicken with pasta

Thursday

dinner- chicken nuggets (if they're still in the fridge - if the kids have already eaten them, beefburgers) with boiled potatoes & beans

Friday

lunch- spaghetti bolognese

dinner -  I have some mince so ... cottage pie maybe?

Saturday

lunch- leftover cottage pie from last night

dinner- Spanish omelette

Sunday 

lunch- roast chicken, roast potatoes, veg & gravy

dinner- cheese on toast or leftovers

Project 366 : Photo Diary week 24

This week was a busy week at work. Not only did the older kids come back, we also had the announcement that we had to fill in all the end of term school reports - not an easy task when we haven't seen the pupils since March ! - and the end of year skills assessments for the end of the week. You can tell how busy I was as I didn't even get a chance to blog all week ! The oldest pupils will now come in all week, rather than in two half classes - I hope they've thought about it as I'm not entirely sure they'll fit in the classrooms that have been set up with widely-spaced desks. Oh well, only three weeks to go until the end of term !


Sunday 7th June - It was Mother's Day in France and I wasn't really expecting anything. The kids had been super organised in secret though. Sophie had ordered a gift online, Juliette had wrapped and hidden it and Pierre made a card. I was very impressed with their organisational skills, not to mention the present itself. Awww !


Monday - Back to work with an earlier start at 8.30am, rather than my usual 10am start on a Monday. That would have been fine but from 9.30 until 11am, I was kicking around in the staff room with nothing to do - pffff ! I decided to head into town after work to try to find out what is going on with our summer holiday. Our planned holiday to the Dominican Republic is doubtless cancelled, but I'd like to know what to do to get the money back ! Unfortunately, the recently re-opened travel agent's was shut early, so I'll have to try later in the week. They had an email in the window though so I might give that a try.


Tuesday - Another day at work. Only half an hour for lunch, then I discovered that there were big computer issues in my next classroom. Aaaggghh ! This happens every time I have class in this room. Time to make up another lesson at the last minute :-/ Got home and made a sausage casserole, throwing in a tin of red kidney beans that the kids wouldn't notice !


Wednesday - A day off - phew ! I decided to take a minute to email the travel agent's. They got back to me and said they'd contacted their partners and would get back to me as soon as they heard from them. Nobody really knows what is going on. Sophie is keeping an eye on Eurostar and the ferries too, as she wants to come back to France as soon as she can, now that she's finished her studies until September. I can't remember what I did for the rest of the day to be honest - oh, I know, I filled in all my school reports. I went to grab some shopping and took a picture of this angry-looking seagull on the way !


Thursday - For the first time in about three months, I met up with my friend Isabelle during my lunch break and we went to a restaurant. It felt weird as it's a big place and they've removed half of the tables. You have to wear a mask to walk into and out of the restaurant but you can take it off once you're sitting down. There are no menus, except one on the wall (luckily we know the menu !) and there's no salt and pepper on the tables. Apart from that, it was about the same as usual. Lovely to catch up, although it seems weird being out now ! On my way back to work, I took a picture of the clouds in the sky. There were long horizontal ones at the bottom and mackerel spot clouds cutting across the sky diagonally, which looked pretty cool.


Friday - A weird day at work. I had the morning off so I only had two hours of lessons with a half hour break in the middle. (Timetables have been set up with staggered starts and different breaktimes, so that there's only ever one class in the playground and toilets at a time.) For my first hour, the librarian asked if she could come in and talk to the kids for a while ... which ended up being the whole lesson. After waiting around for the second hour, I headed into the classroom, set up the mouse and keyboard (we all have our own now, to avoid sharing equipment), did the register then saw a message telling me that due to the new timetable kicking off, I had to let the kids go half an hour earlier than planned. This meant I only had about 20 minutes of actual lesson time with them - agggghhh !


Saturday - Juliette had an appointment at the orthodontist's ... at 8.40am. Aaagghhh ! It made us get up and make the most of the day though. This is the first time that Juliette has set foot outside of the house in about three months, so I dragged her to the beach for a walk then we headed into town for a quick look around. She had leg ache afterwards - tee hee hee !

Madhouse recipe : Tuna Filo Parcels


Heading back to work, I knew that one of the trickiest things would be lunchtimes. The canteen is open but people have to keep their distance from each other and food options are limited. On top of that, teachers are having to help out with supervising and moving around the different groups of pupils from one place to another, so I needed a quick packed lunch. These Filo Parcels were great - quick to make and they taste lovely. They can also be eaten either hot or cold, which is a bonus.

Tuna Filo Parcels

ingredients :

a roll of filo pastry
a tin of tuna
1 large cooked potato
1/2 a tin of sweetcorn
handful of grated cheese
1 egg
1tsp smoked paprika
1/2 tsp garlic salt
a little oil (for brushing)


Drain the tuna. Crush the potato with a fork in a bowl, then stir in the tuna and the spices. I used paprika and garlic salt as I wanted to keep things tame for the kids, but you could use chilli, cumin, mint, ... whatever you fancy !


Add the egg and mix it in. I also used up the end of a tin of sweetcorn, which worked well.


Looking through the fridge for inspiration, I finished off the end of a bag of grated cheese. Parmesan would work too. Maybe some capers or gherkins? 


Cut the filo pastry into wide strips (about 10cm wide). Place a heaped tablespoon of filling on the end of the strip.


Fold the end of the filo pastry across the filling diagonally. You may want to flip up the edge of the pastry along the bottom to help seal in the filling. Then flip it across to the left, then along the diagonal edge.


Tuck the ends in if you can, to save the filling splurging out.


 You could fry these in a deep fat fryer for a few minutes until they go crispy and golden brown. I opted for the healthier choice though and put them in the oven for 12 minutes. (Keep a check on them and remove them before they start to burn.)


Eat with salad or rice, or maybe even couscous. Or just pop them in a packed lunch as a quick snack.

What's Cooking At The Madhouse ? menu plan week 24


Last week was a bit of a nightmare in terms of menu-planning. The kids couldn't be bothered with cooking and opted for toast or a sandwich for lunch instead of what I'd bought, so we now have various "kid food" options to use up. Think chicken goujons, chicken burgers filled with cheese, hotdog sausages ... That's fine, except they're in packs of two - just enough for Pierre and Juliette but not enough for all three of us. Aaaggghhh I remember this from when I was at work before. Well, I'll work something out. And I'm not buying any more lunch options. They can make do with leftovers or a sandwich !

lunch- day off for everyone ... chicken fillets, pasta & salad

Project 366 : Photo Diary week 23

This week was a weird week as we headed back to school. Monday was a bank holiday so Pierre only had to go in on Tuesday, as he goes for the start of the week. I went in for meetings on Tuesday then lessons on Thursday and Friday - back to life, back to reality ! (Are you even old enough to remember that song ?!) Next week, the other years will be restarting too, so things are going to get even stranger. Ah well, only a month to go until the holidays. Just as well as Pierre is now left to do his schoolwork on his own on Thursday and Friday (with a little help from Juliette !).


Sunday 31st May - Almost into June, which is synonymous with summer. So how come today was a day of rain and storms ? At least it'll do the gardens good !


Monday - Last day of staying at home all day. No idea how things will work at school but there won't be a canteen tomorrow, as the kids are only there in the afternoon for an hour, so I made some tuna filo pastries to take in for lunch. 


Tuesday - Back to work. It was nice to catch up with my colleagues. We were all spaced out in the hall which seemed weird. We were all given our own wireless keyboard and mouse that we will use in each classroom, as it's the teachers who have to change classes rather than the kids. I ended up heading to the beach for lunch with a work colleague (it's only a few minutes from school) and it was full of people in bikinis sunbathing ! Luckily, it's a huge beach so they were all spaced out. We were only there for half an hour and I still ended up with a patch of sunburn on my arm ! On the bus on the way home, there were about six people with no mask on, even though it's obligatory. I was sitting on a seat with an empty seat next to me, with strips of tape on it and a "leave this seat free" sign on it, but a woman without a mask still sat on it. I gave her a filthy look but didn't say anything to her - with hindsight, I should have done though ! From now on, I sit on the outer seat (with the tape on it) so that at least nobody can get to the empty seat.


Wednesday - My day off so I had a chance to work out what to do in my lessons tomorrow. No idea how many kids will be there so it's all a bit unknown at the moment. I went shopping and grabbed a pack of toilet rolls. I glanced at the receipt after putting it all away and realised we got charged twice for the toilet roll. I don't usually bother complaining but this was the most expensive item on the receipt so I decided to go back - it's only 5 minutes away after all. The checkout girl had just closed her till so I said I'd take a second pack, rather than getting my money back. We'll have enough toilet roll for a while now !


Thursday - The first day of lessons ... and disinfecting ! At the start and end of each lesson, we have to spray and wipe down the tables, the board wiper, the chair, the keyboard, the mouse, ... basically everything that we'll be touching during the lesson, then disinfect our hands with the hand gel. Each class is split in two so there are a maximum of about 12-14 pupils per class. In reality, I had between two and five though. Which is just as well as my mouse and keyboard wouldn't work - aaaggghh ! Time to make up a lesson on the spot that doesn't need the computer !


Friday - After yesterday's IT problems, I was told to take the keyboard and mouse from the staff room. They have cables but at least they work ! The pupils have lessons on Monday/Wednesday/Friday one week, then Tuesday/Thursday the next week so we end up doing the same lesson twice with each half group ... or four times if we have two classes in the same year group ! There's plenty of space between desks and everyone has a mask. There are still only a handful of pupils per class so it's nowhere near as bad as I was expecting.


Saturday - After the usual weekend jobs (laundry and grocery shopping), I made a batch of choc chip and cranberry cookies. They are delicious but ended up gigantic ! The kids aren't complaining though !

Madhouse recipe : Fresh Cherry Muffins


After splurging on way too much fruit at the market when it finally reopened, I decided to use up the end of a bag of lovely black cherries in these fresh cherry muffins. As I was also using up odds and ends from the back of the cupboard, I also used up a bag of Organic Coconut Sugar, which doesn't change the flavour but gives the muffins a distinctive brown colour that you wouldn't get with regular white sugar. These were really tasty and made a nice change to the usual chocolate muffins and cookies.

Fresh Cherry Muffins

ingredients :

200g plain flour
150g coconut sugar (or just plain caster sugar)
1tsp baking powder
pinch of salt
80ml vegetable oil
80ml milk
1 egg
150g fresh cherries, pitted and quartered
1 tbsp caster sugar (for sprinkling)


Preheat the oven to 200°C. Mix the flour, sugar, baking powder and salt together in a bowl.


This is the coconut sugar that I used up. It tastes pretty much the same as brown sugar but gives a definite brown colour to the cake mix.


Add the wet ingredients (oil, milk, egg).


Stir gently to combine all the ingredients.


 Fold the cherries into the muffin batter.


Spoon the batter into muffin cases - I used a silicon muffin tray but you could use paper cases if you prefer. Sprinkle a little sugar on top.


Bake in the oven for about 20 minutes, until a skewer poked in the middle comes out clean. Transfer to a wire rack to cool.

These were delicious and perfect for using up the end of our cherries. I'll definitely be giving them another go with whatever other soft fruit we have that needs using up over the summer.


These muffins can use up all manner of overripe fruit, so they're perfect for the #KitchenClearout linky. I also used up some coconut sugar that was lurking in the back of the cupboard.

Book review : Sorrow Bound - David Mark


Sorrow Bound is the third book in the DS McAvoy series, but it can be read and enjoyed if you haven't read the others. I was a newcomer to the series and picked up the book in the 2 for £5 section at The Works.

The book begins with the horrifically brutal murder of a woman. We don't really know who she is, who the murderer is or why she has been chosen as a victim. She seems like a nice woman so what has provoked such a violent attack ?

We are soon introduced to the various members of the local police department. Trish Pharaoh, described as "sexy and mumsy and hard as f***ing nails", Helen Tremberg, who seems to have a hidden weakness, the hard-to-like DI Sharon Archer and DS Aector McAvoy, a man with a past as hard to unravel as his Christian name is to pronounce. He is married to a young Romany woman and it is clear that there is a large back-story here, quite possibly dealt with in one of the previous novels. Having rescued her as a teenager who had been assaulted and raped, he apparently took on her attackers. There is clearly a lot more to Aector than meets the eye and I didn't really feel that this book revealed much of his intriguing personality. Even Roisin, his wife, seems to be a feisty character who could have played a larger role in this novel.

That aside, there is a lot going on in terms of storyline. As the murders start mounting up, a link is found between them. They were all involved in saving the life of a man - a man whose extensive injuries mean that he would be incapable of undertaking a new crime spree. So who is behind them? 

As the police focus on the case, several members of the team are dragged into the problems. They each keep their issues to themselves, worrying and making choices that put themselves or their colleagues in danger.

The end of the story left me wanting more, as there are too many unanswered questions. At one point, there is a scene of major violence, but we don't know if the people concerned (fairly important, central characters) survive or lose their lives. I'm sure these characters will be followed up in the next novel, but I would have preferred to find out what happened in this book.

It's an enjoyable read, with lots going on and many intriguing, believable characters. Definitely a series worth looking into.

What's Cooking At The Madhouse ? menu plan week 23


So, back to a working week ... how strange does this seem?! I've bought lots of simple things that the kids can cook for lunch when I'm not there. They managed before so there's no reason they won't cope now ! Last week, we ate everything that was planned except for the tacos. I'll put them on this week's plan instead ! :)

Monday

lunch- It's a bank holiday so we're all together for lunch. Leftover chicken, roast potatoes and veg in a pie, with mash.

dinner - Right, tacos ... I think we've got everything we need ! Sweetcorn, salad, tomatoes, guacamole, mince, cheese ... sounds good to me !

Tuesday

lunch- I'll be at work ... so chicken wings for the kids, with leftover rice (and I'll take a sandwich until I've worked out how things are going at the canteen !)

dinner- turkey curry (or plain turkey in gravy for the kids if they prefer) with rice - I have a jar of Butter Chicken sauce, so I'll try Butter Turkey ! :)

Wednesday

lunch- day off for everyone ... battered fish with potatoes and veg

dinner-  chipolatas with spaghetti & cherry tomatoes

Thursday

lunch- I'll be at work ... cheese & ham croissants for the kids (or leftovers)

dinner- turkey burgers with rice & salad

Friday

lunch- I'll be at work ... leftover sausages for the kids, maybe in sandwiches

dinner -   spaghetti carbonara


Saturday

lunch-  I'm thinking there will be leftovers to use up

dinner- spicy chicken & chips

Sunday 

lunch- not sure what I'll have picked up yesterday at the supermarket - probably a roast dinner of some shape or form !

dinner- pizza
