What's Cooking at The Madhouse? menu plan 10/2

As I sit down to write this, it's only Wednesday lunchtime but I am already counting down the hours to Friday afternoon (sorry, Saturday lunchtime for Sophie !) which heralds in two weeks of well-earned school holidays. Yippee ! I've still got one more parent-teacher evening to get through before then but it's inching closer ! I have no idea yet what we'll be doing during the holidays so I've decided to create my menu plans for both weeks of the holidays side by side, one using up odds and ends and packets and jars from the cupboards for the days when we're out and about, and the other clearing some of my backlog of bookmarked recipes. That way, I can mix and match, dipping into both menu plans to suit our day. How organised is that ?! I'll start off with the #KitchenClearout week - I've just pulled out my tin of seasoning sachets to see what's lurking in there !

Saturday

lunch - time for our traditional Saturday morning trip to McDonald's to ease into the weekend

dinner - tuna napolitana (basically pasta bake with tuna)

Sunday

lunch - the Madhouse grandparents are coming over for the day so it will be roast dinner followed by birthday cake for Juliette

dinner -  chicken soup with the carcass and leftovers from lunch

Monday

lunch - slow cooker sausage and bean casserole with mash

dinner - fishfingers and mac & cheese with leeks

Tuesday

lunch - provençal potato gratin with beefburgers

dinner - beef & ale stew with rice

Wednesday

lunch - spaghetti bolognese (I never usually use a packet mix but there's one in the cupboard so I'll give it a go)

dinner - Moroccan chicken with courgettes, sultanas and almonds, with couscous

Thursday

lunch - Mexican chicken with salad, guacamole, mango salsa and rice

dinner - grilled salmon with Mediterranean vegetables

Friday

lunch - Cajun marinade steak with chips & peas

dinner - Tom Yum soup
