Winding down the fridge before heading off on our travels always results in some unusual but often surprisingly successful flavour combinations. This time, I found a half jar of olives, the end of a chorizo, half a tub of crème fraîche, some leftover cooked chicken, a leek and a handful of slightly slimy mushrooms. I threw them all together with some pasta and we had ourselves a tasty meal that used up all the odds and ends. My motto has always been "Create tummy-fill, not land-fill" and this was perfect !
Creamy chicken & chorizo pasta
ingredients:
knob of butter or drizzle of olive oil
1 onion
1 leek
3 mushrooms
1/2 a chorizo, sliced
leftover cooked chicken (about 1 chicken breast)
handful of green olives, halved
1/2 tub crème fraîche
salt, pepper
spaghetti or pasta of your choice
Slice the mushrooms, leeks and onions. Heat the butter/olive oil in a large pan and gently cook the vegetables until they start to go soft.
Add the chorizo, the cooked chicken and the olives. Season with salt and pepper.
When the meats are cooked through and the chorizo has taken on some colour, add the crème fraîche and stir to coat everything.
Add the cooked pasta and stir though the sauce.
Serve with a sprinkling of parmesan or fresh herbs, if you fancy.
