#KitchenClearout December roundup & January linky


Christmas is usually a time for stuffing our kitchen cupboards to full capacity rather than trying to make some space in them but I still have a lovely roundup of #KitchenClearout recipes from December to share with you. If you have any exciting ways of using up all the leftover festive fayre like mincemeat or Christmas cake, I'm all ears so make sure you link up at the end of the post !


First up last month was this Spicy Potato & Tomato Tart which used up a couple of jars that were lurking in the cupboard - spicy red pepper paste and sun-dried tomatoes. It also used up some slightly squishy tomatoes and can be adapted to clear out pretty much whatever is in your fridge ! Not much of a looker but it tasted great.


Peanut Butter with Sunflower, Pumpkin and Flax Seed  didn't appeal to the Madhouse kids so a pretty much full jar had been lingering at the back of the cupboard for months. I managed to use it up in these no-bake Chocolate Peanut Butter Fridge Bars which disappeared in record time ! The verdict was, they tasted just like homemade Reese's Peanut Butter Cups.


Crunchy Choc Chip Cookies were received with equal enthusiasm and were great for using up a box of cereal that nobody really liked and some coconut water that was taking up valuable fridge space in the run up to Christmas.


Proving that you can never have too many sweet treats at Christmas, more cereal and coconut water went into these No-Bake Choc Mint Nibbles, which made a nice change from the usual festive peppermint creams.


Alison from Dragons & Fairy Dust had the perfect way to use up the leftover turkey in this Spiced Turkey Pie. It looks gorgeous and very similar to the Moroccan Bastilla that I made a while ago that was a big hit too, so I'll definitely have to try this new version.


Some rather wrinkly apples were turned into these delicious Brown Butter Apple Cinnamon Muffins, which also used up coconut water (which I've been using instead of milk in baking lately) and the end of a bag of coconut sugar. I thought I'd get to eat all of these but the kids loved them too !


Galina from Chez Maximka provided the recipe for these delicious-sounding Irish Cream Brownies - I could just eat one of those right now, along with a glass of Baileys. This used up the end of a jar of hazelnut chocolate spread, which is something that never lasts for very long in our house !


A Nigerian recipe, Jollof Rice, which is a bit like paella or jambalaya, started off as a #readcookeat recipe but ended up being a great way of clearing out the veg box in the fridge too !


Galina finished off this month's round-up with a delicious Chocolate Chip Bread & Butter Pudding that was an ingenious way of using up an impulse buy from the men in her life !

I'm sure I'm not alone in thinking that my kitchen cupboards look fit to burst so I'll be making a concerted effort to make some space in the next few weeks. Feel free to link up any recipes that you used to clear out your Christmas leftovers last week.





Sunday weigh-in : Happy New Year !


Christmas is all about having a good time and eating way too much is part and parcel of that. I happily munched away on mince pies, Christmas pudding and ice cream, chocolates, crisps and all those other festive extras that make the calorie-count creep up. We had a Pizza Express night in, I had a pulled pork wrap meal at McDonald's, KFC was also on the menu ... so I have no idea how I managed to not put any weight on at all ! My last weigh-in was 88kg and today was 88.1kg but in between my last weigh-in and Christmas, all the pre-Christmas baking meant that my weight had actually crept up nearer to the 89kg mark. That means that technically, I lost weight over Christmas - how the hell does that happen ?!

I can only imagine it was the Christmas Slimpod doing its magic because I listened to it a few times in the weeks before the big day. Getting out geocaching and for a long walk along the prom possibly helped burn off some calories too and having salads for lunch instead of sandwiches was obviously a good idea. Even better news is that after having a week of eating lots of "naughty" things, I'm now craving soups so I stocked up on some tubs to keep in the freezer for when time is tight.

Positives of the week

- A measly 100g gain over Christmas is a huge surprise !

- The Christmas Slimpod seemed to work so well that it's inspired me to make a concerted effort to keep listening to the regular one.

Current targets 

Last week's target : It's Christmas ! Just keep listening to the SlimPod and making the best choices possible. (DONE - so much better than expected !)


This week's targets : Keep listening to the SlimPod. Get into the 87's. 

Short-term targets 

(1) get back into the 80's
(2) get my "lbs lost" back into double figures

 (4)  get back to 87kg, my pre-holiday weight

Did you have a Merry Crisp-mas?! (Tyrrells review)


Tyrrells' festive crisp bags had a Christmas wishlist on them and I'm delighted to say that we ticked them all off : a reindeer-themed jumper (check - well, near enough anyway, mine's a penguin !), a jolly game of charades (check - Disney Charades was one of the things in Juliette's stocking), a mince pie or two (or even ten ! *burp* - check), a bracing Boxing Day walk (check - watching the waves crashing up on Hastings beach) and finally a stocking full of Merry Crisp-mas crisps.


Merry Crisp-mas was Tyrrells' festive offering and we all loved the slightly kitsch but decidedly Christmassy packaging. Inside the pack is a mixture of naturally red and white potatoes - two highly-prized varieties grown locally in Herefordshire, the white Lady Claire and the Highland Burgundy.


The result is a striking mixture that look as good as they taste. They are hand cooked until they are 'deep and crisp and even' (!) and delicately seasoned with a sprinkling of sea salt to bring out the natural flavours - when they taste this good, they don't need anything else. 


 Red and white always go together at Christmas time - just think of Santa's suit, cranberry sauce on white turkey breast meat, a robin redbreast on a snowy background, candy cane stripes ... - and now they can be in your crisp bowl too !

These are a imited edition, only available in Tesco and independent stores until 31st December, but if you're quick, you can still find them on the shelves. RRP £2.99 for 125g.

Happy New Year & a look back at 2015


I hope you all had a lovely Christmas and New Year. Before looking forward to the year ahead, I thought it would be nice to look back over 2015 and remind myself (and you !) of some of the highlights of the year.


January started off with fun and games as we wrapped Madhouse Grandad up in toilet roll in the Snowman Game ! We made some rather nice Chocolate & Honeycomb Cookies, tried Cinnamon Toast with Strawberry and Banana Compote for Breakfast Week and I told you all about visiting the ancient city of Ephesus in Turkey. 


February was time to take stock of my weight loss trials with the Slimfast Challenge and Dukan, both of which seemed to work as a quick boost in January. We had a go at making homemade cheese, visited a World War II bunker covered in shards of broken mirrors on the beach and got involved in making food art for Bernard Matthews which was fun and surprisingly pretty !


In March, we had fun with footprint painting, tried out some Japanese recipes, took part in a screen-free Switch Off Challenge and checked out the aftermath of the tide of the century. We also had great fun at our science-themed Nick Jr Blaze twitter party and I tagged along on Juliette's class trip to see the Duchesse Anne, Dunkirk's three-master ship.


In April, we made creepy crawlies out of cereal and also went bug-hunting for real. In the kitchen, I knocked up some fabulous Honduran street-food, Baleadas, and we concocted some PBJ cookies as a twist on the all-American sandwich. We also had a very close encounter with some elephants at the circus zoo.


May was a busy month for days out with the Festival of the Sea, fossil-hunting, Operation Dynamo commemorations, a trip to Chessington and a geoacaching trip to a park where we had a very close encounter with a water rat. I also had a work trip to Gdynia and shared some Polish recipes that I tried there.


In June, Sophie was over the moon when Ocado sent us some genuine US imports for Independence Day, we went to a gathering of the local giants, the kids took part in the Disgusting Jelly Bean Challenge and we saw some absolutely crazy hair art ! I also shared more tales of my work trip to Poland, with our visits to the Museum of Emigration in Gdynia and the spa town of Sopot, as well as sampling a local delicacy, pierogis.


July heralded the start of the school holidays with Sophie bravely doing not one but two reverse bungee jumps. We went for an interesting walk along the prom in the Belgian town of La Panne, we had a lovely day out at the seaside for Pierre's birthday and I won a competition by penning a poem about our holiday hell a few years ago.


As always, August was our month of travelling with a fortnight in Kusadasi in Turkey, a few days in Daoulas in Brittany, where we also went rockpooling, and a few days in Hastings. We also had a lovely family meal out at The Treacle Mine in Polegate.


September meant going back to school (boo !) but I kept some sunshine on our plates with some Brazilian Frango Churrasco. We visited a multi-era reenactment camp, saw our town statue get a revamp and I took up the challenge of recreating John Torode's Chocolate and Coconut Pie.


October was tinged with sadness when Juliette's favourite youtuber, 13-year-old Caleb from Bratayley, unexpectedly died. We discovered a weird recreation of Lourdes in a country village whilst out geocaching, I made a gorgeous Moroccan filo pie called Bastilla and we discovered that, against all odds, pumpkin pie is actually rather tasty. We went geocaching along the canal  and around the docks.


November and the run up to Christmas was hectic so 10-minute spicy vegetable soup was a lifesaver. We found a travelbug when geocaching near a lake and painted sugarbeet for St Martin.


And finally December saw us taking part in The Snowman and Snowdog Bakeoff, making very tasty Choc Peanut Butter No-Bake Bars and trying out Ethiopian recipes. We saw the Abyss Illuminated Parade, watched Santa arriving by sleigh and abseiling down the clock tower and saw some magical decorated houses on Christmas Eve.

Wow, I feel tired just remembering it all ! I wonder what adventures 2016 will bring. What did you get up to in 2015? Do you have any favourite memories?

Madhouse diaries : Urban art spotting & Bottle Alley in Hastings


On a wild and windy day, a walk along the prom may not sound like a good idea but Hastings seafront has a nifty double-decker promenade which helps to shelter you from the rain and the worst of the wind. The lower deck was created by "concrete king" Sidney Little (who I was always convinced was half of comedy duo Little and Large when I was a kid !) in the early 1930's and decorated with recycled broken glass, so it was soon dubbed Bottle Alley.


You get serious tunnel vision when standing at one end !


I used to ride my bike through here when I was a little girl so it was funny to see Pierre riding his brand new remote controlled quad bike (that he got for Christmas) through here.


The supporting pillars have all been decorated with different pieces of artwork. 



They are all on flimsy poster paper so between the rain, the sea spray and people ripping bits off, they're all starting to look tatty but that is actually the whole concept of the Point of Decay exhibition which was launched in the summer or 2015 as part of the  Coastal Currents Arts Festival.



It's actually the perfect setting and looks much better than plain concrete pillars.


The best views are outside though.


This one made everyone laugh because they said it looked like me - it does a bit, when I'm looking less windswept !


Back outside, we discovered My Heart Belongs To Hastings.


It's a piece of interactive artwork that was created in 2012 from reclaimed groyne timbers (very inkeeping with the recycling ethos of nearby Bottle Alley) and the idea is that people leave a padlock as a lasting souvenir of their attachment to and time in Hastings.



This is what we were looking for though - a Banksy painting that appeared on the seawall a few years ago and caused a great deal of speculation about whether or not it was a genuine Banksy until he confirmed it.


Another graffiti artist has added another picture around the corner that seamlessly joins the original Banksy.


Whether or not this is a good thing is down to personal opinion. I thought it was quite clever but I suppose it could be seen as defacing the original.


If you want to find the Hastings Banksy, just drive or walk along the seafront towards St Leonards until you get to Marine Court and it's just opposite St Leonards Parish Church.

What's Cooking at The Madhouse? menu plan 1/1/16

After a lovely week visiting the family, it's time to come back - back to menu planning, back to cooking and back to school and work too. Boo ! I'm not sure we'll have time to go food shopping this week so it's a bit of a basic menu using stuff from the freezer and kitchen cupboards.

dinner - frozen pizza or a tub of soup from the freezer

lunch - roast dinner if there was something in the freezer to defrost !
