Madhouse recipe : Spicy Tomato & Potato Tart


This was one of those #KitchenClearoutmeals that resulted from pulling a pretty random selection of ingredients out of the kitchen cupboard and the fridge and thinking that they might work quite well together. Luckily, they did ! Whatever you do, don't go out and buy anything special if you want to try this one - the whole point is using up some of those jars that are lurking in the back of the cupboard wasting valuable space !


Here's what I wanted to use up : a jar of "Red Pepper Paste With A Handful of Fresh Chillies" that must have come in a Christmas hamper last year ! I also had a jar of Sun-Dried Tomatoes that I wanted to do something special with.

Spicy Tomato & Potato Tart


ingredients :

one sheet of ready-made puff pastry
1/2 jar of spicy red pepper paste
1/2 jar sun-dried tomatoes
3 fresh tomatoes
4 potatoes
a ball of mozzarella
some grated cheese
a sprinkle of fried onions (optional)


Slice the onions and mozzarella. Zap the potatoes in the microwave for 10 minutes.


Prebake the puff pastry base in the oven for 10 minutes while it preheats then spread liberally with the red pepper paste (or something similar like pesto or passata).


Arrange a layer of sliced cooked potato on top.


Scatter with chopped sun-dried tomatoes.


Cover witha layer of fresh tomato slices then arrange the mozzarella on top. Add a couple of handfuls of grated cheese. (You might not need extra cheese but the Madhouse kids kept pinching bits of mozzarella so there wasn't that much left !)


Finish off with a sprinkle of fried onions (from a tub - they're great sprinkled on soups or salads to perk them up a bit).

Bake in the oven at 180° for about half an hour until everything is warm and the tomatoes are soft and juicy.
