Getting a weekly fruit & veg box is great fun. Not only does it force you into eating loads of fresh seasonal produce, it also gives you the opportunity of sampling things that you've possibly never heard of and probably wouldn't have dared to buy by yourself. It's always interesting looking out for new recipes to incorporate these new and sometimes unknown ingredients, so I was really pleased when I discovered The Veg Box Challenge over at Kirschplunder's blog.
If you have a veg box, feel free to join in - there are currently 10 bloggers signed up so it should be a great pool of inspiration when we get things we don't know what to do with! I'll continue to post my fruit & veg box contents on a Sunday, then do a round-up of what I cooked at the end of the week.
This week, I had :
artichokes - sometimes you don't need to get complicated - everyone suggested steaming them and eating them dipped in butter, which sounded good enough to me !
avocado - this was turned into guacamole to go with fajitas (just whizz it up with some spring onion, half a tomato, a squirt of lemon juice, a spoonful of mayonnaise and some garlic salt)
spring onions - some went in the guacamole, some was finely chopped and added to green salads and there are still some left for next week
grenaille baby potatoes - Rosemary Roast Potatoes with Honey Glazed Roast Chicken
green pepper - some went in the fajitas, some went in the Goan Hot & Sour Prawn Stir Fry
cucumber - nothing majorly exciting, just added to salads and sandwiches
pears - Pear & Pecan Clafoutis (recipe to follow)
red apples - just eaten as they are
local boscoop apples - will be cooked into something next week
bananas - a very naughty but utterly delicious Banoffee Cake
oranges - eaten as they are
strawberries - Strawberry & Mango Cobbler
yellow plums - these were munched by the kids before the end of day 1 and I didn't even get a look in !
I'll be getting a new fruit & veg box tomorrow so watch this space to see what I'll be using next week !

ReplyDeleteI used to love getting a local veg box, unfortunately they closed and haven't found another local/reasonably priced one :( I used to love the surprise of what was in the box.
