This beautifully refreshing and delicious dessert takes all of ten minutes to throw together but it looks like it must have taken a lot longer ! Perfect for summertime desserts when you can't stand the heat and want to get out of the kitchen !
Daim no-bake cheesecake
10 digestive biscuits
1tbsp runny honey
squeeze of lemon juice
sprinkle of icing sugar
50g Daim chocolate pieces
Melt the butter in the microwave. Crush the biscuits in a plastic bag with a rolling pin and mix into the butter. Stir in the honey and cinnamon.
Press the biscuit mixture into a springloaded tin with a removable base. Put in the fridge for 20 minutes.
Gently stir the sugar into the marscapone. Add a squeeze of lemon juice and a sprinkle of icing sugar to thicken it slightly.
Spoon the marscapone on top of the biscuit base and sprinkle with Daim chocolate pieces.
Keep in the fridge until you're ready to eat then gently push out the removeable base (with the cheesecake still on it). Enjoy !
