#readcookeat recipe : Hilary's Cheese & Bacon Croissants (A Time For Friends)


This is the second recipe inspired by Patricia Scanlan's A Time For Friends (click through to read my review) and it's another of Hilary's fuss-free meals that are as quick as they are tasty.

p115 "She stood at the cooker, inhaling the mouthwatering aromas as she fried off the bacon bits and mushrooms and filled the croissants with them, before adding the sliced baby tomatoes and cheese and wrapping them in tin foil. She slid them into the preheated oven. They wouldn't take long to cook."

Couldn't be simpler !

Hilary's Cheese & Bacon Croissants


ingredients (per person) :

1 croissant
2tbsp bacon pieces
1 mushroom
2 cherry tomatoes
1 slice Leerdammer-type cheese


Cut the croissants in half without going all the way through.


Fry the bacon bits and mushrooms then drain off the excess fat.


Spoon the bacon/mushrooms into the open croissant and top with two halved cherry tomatoes and a slice of cheese. Close the croissant, wrap in foil and put in the preheated oven at 180° for 15 minutes.


Serve on its own as a light meal or with salad.
