Globecooking recipe : Savoyard Pork Burgers (France)


In France, anything labelled as Savoyard - in other words, coming from the Savoie (or Savoy) region in the French Alps - will come smothered in melted cheese and bacon. These simple souped-up burgers can be bought in French butchers and even supermarkets, but they're dead easy to make from scratch too.

 Savoyard Pork Burgers

ingredients :

a pack of pork sausagemeat
sliced cheese, such as emmental, raclette, gouda, Leerdammer, ...
narrow slices of bacon or smoked pork belly


Mould the sausagemeat into burger shapes.


Top each patty with a slice of cheese.


Wrap two slices of bacon around the burger in a cross shape.


Fry in a dry frying pan (ie don't add oil) for 5 minutes or so until the bottom side is cooked and the cheese is starting to melt. Transfer to a baking tray and finish off under the grill in the oven until the top side of the bacon is going crispy, the cheese is melted and the pork is cooked through.


I served ours with rice and a salad but for traditional stick-to-your-ribs Savoyard cooking, feel free to add a side of potatoes, topped with even more cheese !
