We've definitely moved well into the colder weather and I always find that the changing seasons are a great time for clearing out the freezer, using up all the summery things like sausages and meat skewers for the barbecue that will end up lurking in there until next year if I don't use them up now ! It's also been half term, which gives me a push to sort out what's in the baking cupboard. There's been plenty of cooking going on this week, just no time to blog about it !
The #readcookeat challenge led me to discover a total meat-feast of a recipe, Cocido Madrileno, which includes smoked sausages, salty pork belly and chicken, along with chickpeas and vegetables. It was perfect for using up the leftover chicken and vegetables after the Sunday roast.
Leftover boiled potatoes can be made into a (hot or cold) garnish for Ouzo-doused Fish, a summery recipe from Cyprus.
Meatball cottage pie was inspired by a dish we ate in our hotel in Turkey this summer, and is a great way of using up leftover mash and cooked vegetables.
The top shelf in the fridge is overloaded with jars and bottles of condiments, and this Honey-Mustard Pretzel Chicken helped use up a couple of ends of jars of sweet mustard.
Choc Chip Brioche Bread & Butter Pudding cleared out some half stale brioche and pain au chocolat, as well as using up some runny instant egg custard mixture that was destined for the bin.
Galina's Banana Oat Cookies are the perfect way to use up over-ripe bananas and oats (which I always seem to have in abundance in the back of the cupboard!).
A new kitchen gadget with a handy spice grinder gave me the chance to clear out some of the whole spices cluttering up my spice rack and created a lovely Chicken Curry.
Chocolate & Love Salty Cookies were a delicious treat and incorporated a bag of granola clusters that nobody wanted to eat.

I'm envious of your new spice grinder, I so need one in my life. :) The midterm break flew fast like a bullet, whoosh, and it's gone.
ReplyDeleteWe're very lucky - we get two weeks off but I agree, the first one always flies by and it's only in the second week that we actually get a chance to rest and have fun !
