A recipe that uses nothing but store cupboard basics, is perfect for using up leftovers, can be put together in ten minutes and is as tasty as it is healthy. What's not to like ?!
Basil & Bean Stew
ingredients :
2tbsp chilli-infused olive oil
2 onions
1 clove garlic
1/2 red pepper
1/2 green pepper
1 tin sweetcorn
1 tin chopped tomatoes
1 tin red kidney beans
1 vegetable stock pot (or stock cube)
a squeeze of spicy BBQ sauce
garlic salt / oregano / smoked paprika
a large handful of fresh basil leaves
optional : leftover cooked meat or veggies, even rice
Fry the onion and garlic in the oil for 5 minutes, then add the chopped peppers. Empty in the tins of tomatoes, sweetcorn and kidney beans, plus a couple of can fulls of water. Add the stock pots/cubes, BBQ sauce and herbs/spices, plus any extra ingredients you want to throw in there. (Have a good clearout in the fridge !) Leave to simmer for about 10-15 minutes. Chop the basil leaves and sprinkle over the top just before you serve.
