Madhouse recipe : Cheesy Leek, Bacon & Mushroom Puff


Cheese, bacon, leeks and mushrooms wrapped in puff pastry and baked until golden brown - totally simple and always a crowd pleaser ! Serve with rice and extra veggies and dinner's on the table within half an hour.

Cheesy Leek, Bacon & Mushroom Puff


ingredients :

1 pack bacon lardons
1 large leek
4 mushrooms
200g grated cheese
a pack ready-to-roll puff pastry
a little milk (to brush)


Preheat the oven to 200°. Fry the bacon lardons until they release some fat. Toss in the chopped mushrooms and leeks and cook for 10 minutes, stirring, until the bacon is cooked and the leeks are soft.


Add the cheese, stir and turn off the heat. It will all melt and congeal while you sort out the pastry.


Lay out the pastry and pour the filling in a line down the middle section, leaving space at both ends.


Fold in both ends then fold across both long edges to meet int the middle. Use a knife to create a criss-cross pattern all the way along the top.


Brush with a little milk then put in the oven for 20 minutes or so until lovely golden brown and crispy. This is great when you need to start off the food then help the kids with homework while it cooks itself !
