As you'll know if you're a regular follower of this blog, I've entered a few recipes in the New Covent Garden Soup of the Month recipe competition and I love discovering the new themes and trying to concoct the perfect recipe to fit in with it while being utterly delicious ! This month's challenge is : The World Unites in London.

Help us celebrate the world coming to London this summer! We want your best fusion soup recipes with ingredients and flavours from across the globe that come together in one delicious bowl of soup!
This is your chance to make a truly original dish and get experimental in the kitchen. This soup could be a fusion of classic British ingredients with an exotic twist or could combine the most unlikely of country's cuisines to make a delectable celebration of the world uniting in London!
Well, my offering is : Jamaican Jerk Chicken, Sweet Potato and Pineapple Soup
400g cooked chicken, shredded
1/4 fresh pineapple, chopped into chunks plus the juice, reserved
4 tbsp Jamaican Jerk Sauce
1 red onion, sliced
1 red pepper, blackened, peeled and chopped
200g sweet potato, baked
1 litre chicken stock
salt, black pepper
Stirfry the onion for a few minutes until translucent and soft. Add in the red pepper, baked sweet potato and chicken and stir well to blend all the flavours.
Add the seasonings (jerk, salt, pepper) and the pineapple juice. Mix again. Add the pineapple and allow to reduce until it all goes soft and almost caramelised.
Remove half, blend in a mixer, add the chicken stock and add the non-blended half (so it's thick and lumpy with identifiable chunks of goodness in it, that will surprise your tastebuds with spicy chicken and sweet pineapple in each spoonful).
